I have also stirred in fresh grated garlic the last minute of cooking (so I don't burn the garlic). Yum. And in a pinch if I've run out of balsamic vinegar it's still tasty without it.

Directions

In a large skillet, heat oil over medium. Add spinach; cook, tossing often, just until wilted, 2 to 3 minutes. Stir in tomatoes and vinegar; season with salt and pepper. Serve immediately.
