Ingredients

Ingredients

  • 4 large sweet potatoes, pierced with the tines of a fork 1/4 cup (1/2 stick) unsalted butter, softened 2 tablespoons heavy cream 1/2 cup applesauce, preferably homemade 2 teaspoons grated fresh peeled ginger 1 teaspoon coarse salt Freshly ground pepper 2 apples (1 pound), peeled, cored, and cut into 1-inch pieces 3 tablespoons sugar

Directions

Preheat oven to 375 degrees. Arrange potatoes on a baking sheet lined with parchment. Bake until tender, 1 hour 10 minutes to 1 hour 20 minutes. Remove from oven; let stand until cool enough to handle.

Cut each potato lengthwise. Scoop flesh into the bowl of an electric mixer fitted with a paddle attachment; discard skins. Add 2 tablespoons butter and the cream; mix on medium speed until smooth. Mix in applesauce and ginger; season with salt and pepper.

Transfer potato mixture to an ovenproof dish. Bake until heated through, about 10 minutes.

Meanwhile, toss apples with sugar in a bowl. Melt remaining 2 tablespoons butter in a large skillet over medium heat. Add apple mixture; cook, stirring occasionally, until apples are golden and caramelized, about 10 minutes.

Remove potato mixture from oven; top with caramelized apples, and serve.

Martha Stewart Member Rating: Unrated 11/26/2011 Every year for the past 7 years I have tried a different recipe for Sweet Potatoes on Thanksgiving to find one that everyone loves. I made this recipe this year and finally I found our keeper!! Everyone RAVED about it!! I used half the amount of ginger because I am not a ginger person. No one was able to guess what the spice was in it, they thought it cinnamon or nutmeg..lol and I am twice as happy because it is a Very Healthy recipe!! Thank you Martha!!!!

Martha Stewart Member Rating: Unrated 11/29/2010 I made this for Thanksgiving this hear and it really did get great reviews from friends and family. However, I had a hard time getting my apples to caramelize. I followed the recipe, and I used braeburn apples. It seemed like they released a LOT of juice, so I did pour some of that off. Any ideas on what I should have done differently?

Martha Stewart Member Rating: Unrated 11/25/2010 I made a big batch of this recipe for Thanksgiving. It was delicious. I started the potatoes in the microwave to cut down on oven time then transferred them to oven to finish them off. Just be sure to poke them with a fork first. I also added a bit of cinnamon and used ground Ginger because that's what I had on hand. I coated the apples with a bit of lemon juice before adding sugar and caramelizing and they did not turn yucky brown

Martha Stewart Member Rating: Unrated 11/23/2010 This recipe received rave reviews from my friends at a recent Thanksgiving potluck. I was surprised at what a healthy dish this actually was. I found that I had to cook the potatoes over 90 minutes because they were large. Also chefletisia's comment about adding cinnamon to the apples worked well.

Martha Stewart Member Rating: Unrated 12/11/2009 This was great! Everyone really enjoyed them! Yum. I liked the ginger a lot. I will make these again, but maybe add cinnamon to the apples.

Martha Stewart Member Rating: Unrated 10/18/2009 These are fine, but I prefer Martha's Mashed Sweet and Russet Potatoes with Herbs. I would not make these again.
