- 3/4 cup ketchup 2 pounds ground turkey 1 cup chopped onion (1 medium onion) 2 slices sandwich bread, torn into small pieces 1 cup grated cheddar cheese 1/2 chopped dill pickle (1 medium pickle) 1 tablespoon Worcestershire sauce 1 large egg, lightly beaten 2 garlic cloves, minced 2 teaspoons dry mustard powder 1 teaspoon salt 1/2 teaspoon freshly ground pepper
Directions
Preheat oven to 350 degrees. In a large bowl, mix 1/2 cup ketchup with the remaining ingredients until well combined. Divide mixture among 6 cups of a 12-cup (4 ounce) muffin tin, spacing them evenly and gently compressing and mounding the tops. Brush tops with remaining 1/4 cup ketchup.
Transfer tin to oven; bake until inside temperature registers 170 degrees on an instant read thermometer, about 45 minutes.
Remove from oven; let rest 5 minutes before removing from tin. Serve hot.

Martha Stewart Member Rating: Unrated 03/28/2017 Great recipe . Made these for toddlers but adults also enjoyed these muffins. I adjusted the recipe slightly by sautéing the onion & garlic. Also I wasn't sure about dill pickles so added some relish . They were delicious ! They also made 12 nice size muffins. Definetly a repeat . Rather than mustard powder, I mixed Dijon, Katchup and Worcestershire together-both in the mixture and on the tops. I also put a pan of water in the over while baking to keep them moist. Um. Amazing. I sautéed the onion and garlic in a tiny bit of vegetable oil, let cool, then added to mixture. I also minced the pickle. This is a go to meal prep meatloaf ! Very tasty. I highly recommend it!

We quite liked this recipe…so many ways to make meat loaf, it’s always nice to try something new. I liked the pickle and would not have thought of adding it. I used half turkey, half pork, and for the glaze I mixed the ketchup with some barbecue sauce and a bit of brown sugar.

I like the recipe - it was good but I don’t understand the addition of the pickle because that’s all I can taste. I didn’t even add as much as the recipe suggests. Needless to say the next time I make it I’ll delete that ingredient.
