  • 1 1/2 ounces (3 tablespoons) unsalted butter 1 medium onion, minced Coarse salt and freshly ground pepper 1 1/2 teaspoons minced fresh sage 1 1/2 teaspoons minced fresh savory or thyme 2 cups finely chopped cooked turkey 1/4 cup heavy cream 1 cup mashed potatoes 1/4 cup all-purpose flour 1 large egg, lightly beaten 1 1/2 cups finely ground fresh breadcrumbs Vegetable oil, for frying Cranberry sauce, for serving

Directions

Melt butter in a large skillet over medium-high heat. Add onion, 1 teaspoons salt, and teaspoon pepper. Cook for 3 minutes. Stir in sage and savory or thyme, and cook for 1 minute. Stir in turkey and cream, and cook until liquid evaporates, about 1 minute. Transfer to a large bowl, and let cool for 15 minutes.

Add potatoes, flour, and egg to turkey, and season with salt and pepper.

Drop 2 tablespoons turkey mixture into a shallow bowl of breadcrumbs, turn to coat, and pat into 2-inch disks. Arrange in a single layer on a baking sheet, and refrigerate for 10 minutes.

Heat 1/4 inch oil in a skillet over medium heat. Working in batches, cook croquettes in a single layer until golden brown, about 2 minutes per side. Transfer to paper towels to drain. Serve immediately with cranberry sauce.

I wish I had my Mom's recipe, but she's in Heaven now, so tried others, and decided this one seemed most likely to be similar. Instead of "just" mashed potatoes, I added leftover mashed turnips, sweet potatoes and even mashed the leftover candied carrots into the mix. Yes, this required more turkey (which I had) and increased my other measurements, but I was left with enough croquettes to have for dinner, and freeze for another day or two:) As this was the 3rd day after the feast, I had no stuffing left to add:(, so I picked up a bag of stuffing mix, put them through my food processor, and used them in lieu of bread crumbs. Used my practiced eye and hands, as well as my taste buds, to get solid to liquid measurements and aromatics (long time cook) right, then did as suggested, putting finished croquettes onto parchment lined cookie sheets in fridge, before frying. Used up leftover giblet gravy, adding more stock to increase volume for topping, nice fresh salad, oven crisped french bread and cranberry sauce, had family asking for second's and third's:)

The mixture is way too wet and falls apart. Also it tastes very bland. I did suspect the method and should have trusted my instincts to try a different recipe. Sorry it's a no.

I followed the recipe to a T since it was my first time making them, and they turned out great. The "batter" is really sticky and falls apart before putting it into the bread crumbs. I sort of just plopped a blob into the bowl, then scooped bread crumbs all over it. Once it was covered, it was much easier to shape into a ball and flatten on the tray. These were a big hit!

I ate all of my left over (homemade) cranberry sauce eating these - it is now one of my holiday favorites for leftover turkey - it was just yummy - moist and full of flavor on the inside with a nice light crunchy crust on the outside. Again, it was just YUM!

i am making these right now, and it took me quite a bit of breadcrumbs also. i think that is ok.

I may have done something wrong because the patties were very moist and it took a lot of crumbs to make them into patties. They taste excellent though.
