  • 1 1/4 cups (1/3 of a 16-ounce bag) frozen cheese tortellini 2 teaspoons olive oil 8 ounces fresh shiitake mushrooms, stemmed, caps halved and thinly sliced 2 garlic cloves, sliced 1 cup water Coarse salt and ground pepper 3 tablespoons grated Parmesan cheese 1 tablespoon cold butter 1/3 cup chopped fresh flat-leaf parsley

Directions

In a large pot of boiling salted water, cook tortellini according to package instructions; drain.

Meanwhile, in a large skillet, heat oil over medium-low heat. Add mushrooms and garlic; cook, stirring frequently, until mushrooms are tender, about 7 minutes.

Add 1 cup water; season with salt and pepper. Cook until liquid is reduced by half, about 5 minutes. Remove from heat; add tortellini, Parmesan, butter, and parsley. Toss to coat; serve.

You make the recipe as is and see how it goes for your tastes (you wouldn't try it if it hadn't sounded good). Do your thing but let me discover myself...I always mess with recipes. You don't like fine but don't change recipe and complain. Just venting as a chef would I'm sure.

I made a few changes, I used vegetable stock instead of water, doubled the amount of garlic and used basil instead of parsley & it was amazing! It didn't feed that many people, but that could have been because everybody liked it so much! When I made it a second time, I doubled the recipe and used half shiitake and half button mushrooms since they are less expensive and I had some on hand and it was good too, not quite as rich and delicious as all shiitake though...

Why is every recipe under 5 stars….not saying all should be 5 stars but it just seems too many picky eaters out there or wanna-be gourmands.
