  • 1 ear corn (husk and silk removed; tip cut off) 2 pints cherry, grape, or pear tomatoes, halved (or quartered if large) 1 avocado, halved, pitted, peeled, and diced 2 scallions, thinly sliced 2 tablespoons fresh lime juice 1 tablespoon vegetable oil, such as safflower Coarse salt and ground pepper

Directions

Stand ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels. Discard cob. Add tomatoes, avocado, scallions, lime juice, and oil to bowl. Season with salt and pepper, and toss gently to combine.

Also as a Personal Chef, my clients love this dish & request it throughout the Summer. I add a couple dashes of toasted cumin seed that I grind in a coffee grinder that is just for spices.

I also think it works a bit better when you let everything but the avacado marinate for at least 30 minutes in the fridge. When you're ready to serve it, cut up the avacado and add it to the bowl. Mix until the avacado is coated in the juices.

I got compliments for a summer party I threw. I prepped everything in advance except for the avocado, and then threw it all together at the end. The avocado does not turn brown due to the lime juice.
