Directions

In a very large bowl, beat egg yolks until thick and pale yellow. Gradually add sugar to yolks. With a wire whisk, beat in milk and 1 quart cream. Add bourbon, rum, and cognac, stirring constantly.

Just before serving, beat egg whites until stiff. Fold into mixture. Whip remaining heavy cream until stiff and fold in. Sprinkle with nutmeg.

    Martha Stewart Member     Rating: 5.0 stars       12/22/2019   This is similar to the Joy of Cooking recipe, the traditional egg nog, with a substitution of half the heavy cream for whole milk. It's the same amount of alcohol as in Joy as well. The switch from cream to whole milk makes it more heart healthy, which I like. I ran out of bourbon and used 1.5 cups instead of 3 cups but the same amount of the other two kinds of alcohol. It is delicious! If you don't like alcohol in your egg nog, by all means leave it out or reduce it. One word of caution, this recipe is awful right after you make it. It needs time to mature. Make the egg nog at least 24 hours before you intend to serve it; it will be fantastic! Martha recommends making it 2 days before in her video; I can't wait to see what it like after 4 days of maturing in my fridge! Merry Christmas everyone!

Only requires 1 cup of bourbon and 1/2 cup of cognac. Google "Martha's classic eggnog" for the regular (halved) proportions. I just made this recipe for a group and it was ruined by the liquor volume.

Non-fat organic milk works well, as someone else noted, and you can adjust the alcohol content (and the sugar) to suit. For me, the freshly grated nutmeg is a must!

The rest is a must for it to turn out beautifully - everyone's raved about this recipe for YEARS! Thank you, Martha!

Don't be afraid to lower the fat in milk....non-fat organic is perfect....lessen the sugar by one-half or more is also totally ok...use the bourbon or rum alone if you like....doesn't hurt it a bit....i have never used cognac...might try it this week.....but don't forget the cardinal principles of this recipe....the whipped whites and whipped cream folded in last............

This is a fabulous, elegantly classic holiday drink that can be modified a bit and still hold its own! Non-fat organic milk works well, as someone else noted, and you can adjust the alcohol content (and the sugar) to suit. For me, the freshly grated nutmeg is a must!
