Ingredients
Ingredients
- 4 sticks unsalted butter, room temperature
- 2 cups confectioners’ sugar
- Salt
- 5 cups all-purpose flour (4 3/4 cups for chocolate variation), plus more for surface
- 1/4 cup unsweetened cocoa powder (for chocolate variation)
- White Icing for Striped Butter Cookies (optional)
Directions
Beat butter and sugar with a mixer on medium-high speed until smooth. Add 1/2 teaspoon salt and the flour, 1 cup at a time. (For chocolate variation: Add cocoa with last cup of flour.) Scrape down sides of bowl. Beat until smooth, about 2 minutes. Refrigerate until chilled but not firm, about 15 minutes.
Preheat oven to 350 degrees. Roll out dough to 1/4-inch thickness on a floured surface. Cut out one hundred 1 1/2-inch rounds, rerolling scraps; transfer to parchment-lined baking sheets.
Bake until pale gold (or just browning around the edges if making chocolate variation), about 16 minutes. Let cool.

Emmasyaya,
In the US, a stick of butter is a far MORE precise measure than cups. I have weighed sticks of butter out of curiosity, and I never found one less than 113 grams or more than 115. I don't know about you, but I am not that consistent when I use a measuring cup. A half cup measure could weigh anywhere between 95 and 130 grams depending on technique.Since this IS an American site, after all, it's perfectly appropriate to give sticks as a standardized, widely available measurement.

Recipe seems like traditional shortbread to me as well. If anything could be added I'd pop in some finely-chopped pecans or almonds.

1 lb = 454 grams. 1/4 of a lb = 113.5 grams = one stick of butter.

it seems odd that the very meticulous ms. stewart would have a recipe that called for a measurement as imprecise as "sticks" of butter. generally she would go for cups, with poundage in parentheses.

Chefcheungies, I don't think any ingredients are missing.
This is a fairly traditional shortbread recipe.

It seems that ingredients are missing from this recipe. No eggs or vanilla?
