Ingredients

Ingredients

  • 1 medium onion, diced 1 teaspoon dried oregano 2 dried bay leaves 1 chipotle, in adobo sauce, minced 1 tablespoon adobo sauce 1 can (28 ounces) crushed tomatoes 1 can (14.5 ounces) whole tomatoes in puree 2 teaspoons coarse salt 1/2 teaspoon ground pepper 2 3/4 pounds boneless pork shoulder, trimmed and halved crosswise Flour tortillas, lightly toasted, for garnish (optional) Grated cheddar cheese, for garnish (optional) Sour cream, for garnish (optional)

Directions

In a 5-quart slow cooker, combine onion, oregano, bay leaves, chipotle, adobo sauce, tomatoes (and puree), salt, and pepper. Add pork; toss to coat with sauce.

Cover; cook on high setting until meat is pull-apart tender, about 6 hours (do not uncover while cooking).

Transfer meat to a large bowl; shred with forks, discarding any gristle. Return meat to pot; toss with sauce.

To serve, discard bay leaves; if desired, garnish with tortillas and cheddar or sour cream.

Cook’s Notes Keep the cooker covered during cooking; remove the lid only to add ingredients or at the end of cooking time. Do not place inner pot in the refrigerator; store leftovers in a different container.

Martha Stewart Member Rating: 5 stars 12/02/2017 I've been making this for years- with more peppers before having kids and with fewer peppers once they started eating it. It's one of the my kids most requested dishes. It is very easy to make too. I find there is a LOT of liquid in the end and so I put a small amount in a dish for when I reheat leftovers the next day - it's helps moisten up the meat again. Then I put the rest of the liquid (minus the fat) in another big container. The next night I brown up some ground meat -usually buffalo or ground beef, may be sausage and add the sauce to it and simmer. It makes a wonderful, flavorful meaty pasta sauce.

Martha Stewart Member Rating: Unrated 03/04/2012 This was delicious! I love it as an alternative to the vinegar/worcestershire sauce flavors of my default pulled pork recipe. I recommend adding an additional 1-2 chipotles if you really want this to be "spicy." I found that with one, there was almost no heat at all. The flavors were still delicious, but if you're looking for spice, put in a few more peppers!

Martha Stewart Member Rating: Unrated 08/26/2011 I threw this in the slow cooker tonight after work, went out for dinner and came home to a ridiculously delicious result. Cannot wait to enjoy it during the coming week!

Martha Stewart Member Rating: Unrated 12/31/2010 Love this recipe so much, we print and give to our friends with ingredients. Very popular. Few suggestions; Queso Fresco cheese and Monterey Cheese. Monterey gives creamy texture. Crumbled Queso Fresco is killer and disappears first. Slice an avocado for peeps to put in their tortillas. Also, bowl of fresh cilantro goes very well. Great for Super Bowl Parties - a must! So Yummy

Martha Stewart Member Rating: Unrated 01/28/2009 Another recipe for pulled pork sandwiches called for cooking at 350 for 2 to 2 1/2 hrs or until tender in a covered pot (3 lbs. pork)

Martha Stewart Member Rating: Unrated 01/12/2009 At what temperature and for how long would you cook this in the oven? I don't have a slow cooker.

Martha Stewart Member Rating: Unrated 12/27/2008 I must dittto the previous comment. However I did increase the pork shoulder size to 4 lbs with a bone-in (adds more flavor) and used 2 super-chopped jalapenos (included seeds) vs chipolte
