- 1 1/2 pounds broccoli 4 1/2 tablespoons olive oil 1 clove garlic, minced 1/4 teaspoon salt 1/8 teaspoon crushed red pepper 1 1/2 teaspoons vinegar 3/4 cup water
Directions
Peel and slice thick stems from broccoli; separate florets.
In a skillet, bring water to a simmer over medium-low heat. Add stems and florets; cook, covered, until bright green, 4 minutes.
Stir in olive oil, minced garlic, salt, and crushed red pepper. Cook 4 minutes.
Turn off heat; stir in vinegar.

Happiness is a big bowl of chopped or cut broccoli (from bags of frozen, then microwaved) either alone or with frozen corn and a touch of Smart Balance mayo and/or a sprinkling of finely shredded cheeses and garlic croutons. My concern is that there could be a loss of up to 75% of the antioxidant content through the microwaving process. Does anyone have a reliable source to confirm this information? We REALLY like garlic so I usually throw 2 or 3 large cloves in and use a bit more than 1/2 t of pepper flakes. I steam the broccoli right in the pan with just a little water so there is no reason to drain, it evaporates right off. I usually squeeze a half a lemon over it too. It doesn't take too long for the water to evaporate even with the cover on. I wouldn't have thought to use vinegar as I've always just added a splash of fresh lemon juice, but since the recipe doesn't specify which type of vinegar to use, I used seasoned rice vinegar and it really added a nice touch.
