  • 1/4 cup apricot jam 1/4 teaspoon red-pepper flakes 4 boneless, skinless chicken breast halves (about 6 ounces each) Coarse salt and ground pepper

Directions

Heat broiler, with rack set 4 inches from heat. In a small bowl, stir together jam and red-pepper flakes; set glaze aside.

Place chicken on an aluminum-foil-lined baking sheet; season with salt and pepper. Broil until chicken begins to turn opaque, 5 to 6 minutes.

Brush glaze on chicken. Broil until glaze is browned and an instant-read thermometer inserted in thickest part of chicken registers 165 degrees, 4 to 5 minutes more.

    Martha Stewart Member     Rating: Unrated       01/24/2011   I jazzed it up a bit. Used 1/2 cup of apricot jam, 1/2 Tbls of Dry Onion Soup mix, red peper flakes and lite soy sauce. Mix all together and then I sauted my chicken breast (or you can bake) towards the end I poured the sauce of the chicken until it gets a nice thick glaze. Also have stir fry red/yellow/orange peppers chuck into chuncks, with chunks of red onion and fresh sliced mushrooms. It turned out great. Serve rice on side.

The parts of the chicken that kept the glaze were very tasty and I would definitely make it again.
