  • 1 pound (4 sticks) unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 3 cups all-purpose flour
  • 2 cups shredded sweetened coconut
  • 1 cup sesame seeds
  • 1/2 cup finely chopped pecans

Directions

Preheat oven to 300 degrees. Line baking sheets with Silpats (French nonstick baking mats).

In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add flour a half cup at a time, mixing on low speed until well combined.

Remove bowl from mixer; with a wooden spoon or your hands, stir in coconut, sesame seeds, and pecans. Divide dough into thirds. Roll into logs about 1 1/2 inches in diameter. Wrap each log in plastic, and refrigerate until very firm, about 2 hours.

Using a sharp knife, cut logs into 1/4-inch-thick slices. Transfer to prepared baking sheets, about 1 1/2 inches apart. Bake until edges are golden, 20 to 30 minutes. Transfer sheets to a wire rack to cool. Cool for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely.

                I have been making these for decades. They are delicious, crispy, nutty, delicate and always a hit. I keep the dough rolls in the freezer, ready to be baked fresh on a moments notice. This exact recipe came from a San Francisco Junior League Cookbook published in the seventies.  Hmmm, never thought to enter them in a cookie recipe contest.

                I make these every year.  I roll the logs into red and green sugar to make them festive for Christmas! They are one of my favorite cookies!

                I confirmed with my coworker that she DID the recipe exactly as it's listed above, she did not ommit the coconut. I misunderstood. GOOD COOKIE try!!!!

                A co-worker made these without the coconut and I tell you they are delicious. She provided me witht this recipe and she told me that othe than the coconut, she made no other changes. I would have never thought I would love a cookie with sesame seeds, but I was wrong.  I will try this recipe for the holidays, believe me from tasting it from her for the past two years, this cookie is well worth it. DELISH!

                how can this be a no cook cookie, 300 foe 20-30 minutes, who is proof reading?
                also, the apple cupcakes, no frosting receipe and where do you get fondant?

                How can this be a no bake treat when they are put in the oven at 300 degrees for 20 to 30 minutes.  Sounds like baked to me.

                I sometimes find this site frustrating...I follow directions for recipes and crafts exactly as posted, and they are often failures due to inadequate or unclear instructions.  Yes I know this comment is off-topic, but how do I get my comments sent to the proper people?
