  • 1/2 cup quick-cooking rolled oats Coarse salt and ground pepper Nonstick cooking spray 1 large egg 2 tablespoons shredded sharp cheddar 1 tablespoon thinly sliced scallion greens

Directions

In a small saucepan, bring 1 cup water to a boil. Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes. Meanwhile, heat a small nonstick pan over medium. Coat lightly with cooking spray. Add egg and cook until white is set and yolk is still runny, about 3 minutes. Season egg to taste with salt and pepper. Serve oatmeal in a bowl topped with cheese, egg, and scallion greens.

My only alterations were using pepper Jack cheese because I am out of cheddar, and omitting the scallions because I'm not a fan, but otherwise, just the salt and pepper were good enough for me! This is a keeper FOR SURE11

I used a garlic pepper blend to season it instead of scallions because I didn't have any scallions on hand and I really liked that. I think that with just the scallions it might have been a little bland. Anyway, this was a tasty.

My husband is diabetic and eats this meal on a regular basis. To flavor the oatmeal further, he adds Tabasco, garlic salt, and/or other spices. He has also been known to add chopped ham, sausage, bacon, etc. The meal is substantial and stays with him all morning, and his numbers have improved greatly with this as part of his standard meal routine.
