- 1/2 cup quick-cooking rolled oats Coarse salt and ground pepper Nonstick cooking spray 1 large egg 2 tablespoons shredded sharp cheddar 1 tablespoon thinly sliced scallion greens
Directions
In a small saucepan, bring 1 cup water to a boil. Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes. Meanwhile, heat a small nonstick pan over medium. Martha Stewart Member Rating: 5 stars 11/02/2019 I honestly can't believe it never occurred to me to make this before, but man, am I glad I found this recipe - it.was.de.lish. My only alterations were using pepper Jack cheese because I am out of cheddar, and omitting the scallions because I'm not a fan, but otherwise, just the salt and pepper were good enough for me! This is a keeper FOR SURE11 Martha Stewart Member Rating: Unrated 11/02/2019 You say that like a crispy edge is a bad thing?! haha Martha Stewart Member Rating: 4 stars 11/25/2018 The recipe is excellent, although I have made one change. As it is too easy to get a crispy edge on a fried egg, I poach the egg. Martha Stewart Member Rating: Unrated 06/13/2016 Would have added more spices but it was my first time making it. Also thought it wouldn't be filling so I made 2 servings which I couldn't finish. Great meal to get the day started 10/10 would make again Martha Stewart Member Rating: 4 stars 08/28/2015 This was good - I've never actually thought of having savory oatmeal for breakfast so this was a nice change of pace. I used a garlic pepper blend to season it instead of scallions because I didn't have any scallions on hand and I really liked that. I think that with just the scallions it might have been a little bland. Anyway, this was a tasty. Martha Stewart Member Rating: 5 stars 06/21/2015 Oatmeal does not need the addition of any sweetener. Adding sugar defeats the purpose of having a savory breakfast meal. My husband is diabetic and eats this meal on a regular basis. To flavor the oatmeal further, he adds Tabasco, garlic salt, and/or other spices. He has also been known to add chopped ham, sausage, bacon, etc. The meal is substantial and stays with him all morning, and his numbers have improved greatly with this as part of his standard meal routine. Martha Stewart Member Rating: Unrated 10/14/2014 Not sure how I missed this one years ago..I have to say, I do love my oatmeal...but I also love a savory breakfast...well here it is and I can't tell you how much I love this!! Can't believe I never thought of this!!!! Martha Stewart Member Rating: Unrated 09/27/2012 Very good! I like to use chicken or veggie broth instead of water to give the oatmeal more flavor. Martha Stewart Member Rating: Unrated 11/28/2010 Very hardy and warming. Add a little amount of sugar to the oatmeal or Truvia. This makes the dish truly sweet and savory. Without the sweetening, oatmeal is very bland. Martha Stewart Member Rating: Unrated 11/02/2010 My new favorite breakfast. Use old fashioned oats and they don't turn to mush like quick cook (much better texture than the mush of quick cook). This really sticks with you through the morning. I leave out the scallions and it's a 3 minute breakfast.Martha Stewart Member
