Ingredients

  • 1 can whole tomatoes with juice
  • 1 chopped jalapeno chile, (seeds and ribs removed for less heat)
  • 1 small onion, chopped
  • 2 garlic cloves
  • 1 tablespoon canola oil
  • Coarse salt and ground pepper

Directions

In a blender, puree tomatoes with juice, jalapeno, onion, and garlic.

In a medium saucepan, heat oil over medium heat. Add puree; cook, stirring frequently, until slightly thickened, about 5 minutes. Season with salt and pepper.

                This is simply a pico de gallo blended.  I make mine with  homemade enchilada gravy that smothers corn tortillas and three fried eggs on top.  Pico de gallo is not really an authentic topping for huevos rancheros.  Use the above mentioned gravy (not canned please) or chile colorado for a more authentic dish.  Clue:  enchilada gravy (it is easy to make) has no tomatoes in it.  It is red because of the use of chile powder not tomatoes.  I don't care what the can says, it's wrong.

                You'd think with a billion dollar empire, a mistake like this would've been fixed by now.  And a website with such a wealth of information would be a bit easier to navigate around.  Grrrrr.  Martha, Martha, Martha!!!

                You obviously have the ingredient list for a different recipe. When are you going to correct this error? Most of these comments have been up for a week with no correction.

                You are so right..rancheros sauce is usually made up of tomatoes, onions and sometimes peppers.  Traditionally no meat!

                Where does the beef go?  I thought rancheros sauce was just a red sauce, no meat.
