  • 8 plum tomatoes (about 1 1/2 pounds), halved lengthwise 1 tablespoon olive oil 1/4 teaspoon dried thyme 1/2 teaspoon coarse salt 1/4 teaspoon ground pepper

Directions

Preheat oven to 425 degrees. Place tomatoes on a rimmed baking sheet; toss with oil, thyme, salt, and pepper until coated. Arrange in a single layer, cut sides up. Bake until soft, about 30 minutes.

I serve them with roasted garlic over spaghetti and a dollop of pesto. My husband cheers, my often picky kids swoon and we all sit down to a fabulous dinner. I have been known to add fresh basil, toasted pine nuts and grated Parmesan as well. Thanks, Martha. This is the epitome of "Everyday Food".

I’ve made this many times, sometimes with thyme and sometimes with dried oregano. Both versions taste good. It’s a simple recipe and a great side dish.
