  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for baking dish 1 cup granulated sugar 3 large eggs 1 cup all-purpose flour, (spooned and leveled) 1/2 teaspoon salt 1/2 teaspoon baking powder 2 containers (1/2 pint each) raspberries (2 3/4 cups) Confectioners’ sugar, for dusting (optional) Whipped cream, (optional)

Directions

Preheat oven to 350 degrees. Butter a 2-quart oval or square baking dish. In a large bowl, cream butter and sugar with an electric mixer until fluffy. Add eggs, one at a time, beating after each addition to combine. In a large bowl, whisk together flour, salt, and baking powder; with mixer on low speed, gradually add flour mixture until incorporated.

Spread batter in baking dish. Scatter raspberries on top. Bake until a toothpick inserted in center of cake comes out clean and top is golden brown, 45 to 50 minutes. Let cool 20 minutes; dust with confectioners’ sugar, if desired. With a large spoon, scoop out onto serving plates; serve with a dollop of whipped cream, if desired.

I added blueberries to the raspberries, skipped the whipped cream and served it warm with a scoop of vanilla bean ice cream. I made another one for a friend who just had a baby and they loved it too. If I was thinking of getting the magazine, or looking at Martha University or doing whatever else will pop up next, I'm not now. I'm a big fan of just about all you do, but this I HATE.

This is THE recipe for all or combinations of these berries. I have made it in double batches with 1, 2 or 3 types of berries 5 times in the past 3 weeks! Tonight again I made this delicious berry-laced dessert, two single pans, one to give as a gift. Thanks for this easy recipe, it has been a winner each time I have served it!

I made a few changes by adding a handful of semisweet chocolate chips on the top of the batter along with the raspberries before baking. Once cooled, I scooped the raspberry buckle into martini glasses, topped each one with whipping cream and a quick drizzle of chocolate sauce. I finished it off with one last beautiful raspberry on the top. It was a huge hit.

I served it with whipped cream and It received rave reviews! I will definitely be making this again with different fruit combinations!

It was so moist and delicious, not too sweet, and lovely served with a dollop of whipped cream while still warm . Quickest prep ever!! Hard part was waiting the 20 minutes to cool before cutting.
