Ingredients

  • 2 tablespoons olive oil 4 bone-in pork chops (1 inch thick) Coarse salt and ground pepper 4 strips bacon, coarsely chopped 1 medium onion, cut into 1/2-inch slices 1 head green cabbage (about 2 1/2 pounds), cored and cut into 8 wedges 3 tablespoons all-purpose flour 3 cups whole milk

Directions

Preheat oven to 400 degrees. Set a large heavy roasting pan across two burners over high heat; add oil and heat. Season pork with salt and pepper; brown on one side, 3 to 5 minutes. Flip and cook 1 minute more. Transfer to a plate.

Reduce heat to medium. Add bacon; cook until golden, about 5 minutes. Add onion; cook until softened, 5 minutes. Add cabbage, cut side down, and cook until light golden, about 6 minutes. Flip and cook until slightly tender, about 3 minutes. Add flour and stir until coated. Add milk and cook, stirring constantly, until thickened, about 4 minutes. Season with salt and pepper, then nestle pork chops in sauce. Transfer pan to oven. Bake until pork is cooked through, about 10 minutes.

    Martha Stewart Member     Rating: 5 stars       02/18/2018   This was a delicious recipe. I had no curdled milk and am surprised some others did. I only use 2% milk and true tablespoons of flour. The sauce came perfect. The pork chops were moist and tender. This would be great paired with some noodles. Next time .

I've made pork loin cooked in milk before and the milk protein does always seem to "curdle" a bit. In some sauces you can hit it with an immersion blender etc. but that would destroy the lovely cabbage texture in this dish! A great use of all of the cabbage coming from my CSA!

It was just too thick. Next time, I'm going to cut it down to 1 tbsp of flour, and one cup of milk with one or two cups water. Also, my pork chops were kind of tough and chewy. Not sure if it's just the quality of chops I buy. How can I tell what's good? It's just labeled pork chop at the supermarket =\

The recipe calls for a season of salt and pepper right before transferring to the oven. I skipped this step for fear of over salting with the bacon. I should have followed the recipe, because the sauce needed it.

This was a delicious recipe. I had no curdled milk and am surprised some others did. I only use 2% milk and true tablespoons of flour. The sauce came perfect. The pork chops were moist and tender. This would be great paired with some noodles. Next time .

So it wasn’t a beautiful dish but the flavor was fantastic. I’ve made pork loin cooked in milk before and the milk protein does always seem to “curdle” a bit. The flavors were pretty great from the bacon, and I LOVED the cabbage, but there was way too much flour and milk for me. It was just too thick. Next time, I’m going to cut it down to 1 tbsp of flour, and one cup of milk with one or two cups water. Also, my pork chops were kind of tough and chewy.
