  • 4 tablespoons unsalted butter, plus more for pan
  • 10 1/2 ounces mini-marshmallows
  • 1/2 cup creamy peanut butter
  • Homemade Granola

Directions

Butter a 9-inch-square baking pan; set aside. In a large saucepan over medium heat, melt butter. Add marshmallows; stir until melted, about 4 minutes. Remove from heat.

Stir in peanut butter and granola until well combined. Transfer mixture to prepared pan. Dampen your hands, and press mixture into prepared pan, distributing mixture evenly. Set aside to cool. Invert pan, releasing bars. Cut into 16 squares.

                your mini marshmellows come in a 101/2 oz. bag. Just use the whole bag . Hope thats helpful.

                I am a cooking novice.  Can someone convert for me the 10 1/2 ounces of marshmallows into cups?

                Axadew, if you're hesitant to use the butter and in that amount I make my granola with 3/4 c. honey (or a mixture of honey and real maple syrup) and roughly 2 Tb. of olive oil.  And I actually use a citrus infused olive oil that I had gotten as a gift.  It adds great flavor to the spices (cinnamon, nutmeg...) in the recipe.  (Oh, and I add cut up dried apricots at the end).  It works great, it's healthful, the kids love it, and my friends always come back for more.

                Maybe it's because there's a degree of anonymity through these forums that some feel its o.k to  be rude  others.  No one here claims to be a brainiac, we should just assume that we all  like to cook.

                You can now find marshmellow creame made of brown rice syrup-still "sugary" but with out as much of the refining process.

                Anyone have any ideas about what you could use instead of marshmellows to hold it together?  Sounds like a great recipe, but I'd like to cut out the refined sugar :o)
