Directions
Heat grill to medium; lightly oil grates. Cook rice according to package instructions. Set aside.
In a small bowl, whisk honey and 2 tablespoons pineapple juice; season with salt and pepper.
Alternately thread pork and bell peppers onto skewers; season with salt and pepper. Grill, brushing occasionally with honey mixture, until pork is cooked through and peppers begin to char, 10 to 15 minutes.
To rice, add pineapple chunks, scallions, ginger, and oil. Season with salt and pepper, and fluff with a fork. Serve kebabs with rice and lime wedges.

I made the rice ahead, and then stir fried it in a little oil with the onions, then the pineapple, and put some sweet chili sauce on the table. We LOVED the kabobs. Perfect. Easy. We’ll make this again and again. I made the rice ahead, and then stir fried it in a little oil with the onions, then the pineapple, and put some sweet chili sauce on the table. Great recipe, if you like sweet meats. I ended up grilling this on our non-stick grill pan on the stove. No skewers. I cut the pork in 1" chunks and same with the red peppers and vidalia onions too. I marinaded everything together and put it on the pan. It was very good, but fire was too high, so be careful of that. Rice was great! I added peas to mine, and left the ginger out (forgot it). Dinner was fab!

I fixed this for dinner tonight. The pork was great I put chunks of vidalia onions instead of the red peppers and marinated the pork instead of brushing it on at grilling time. I didn’t care for the rice. It was too bland. I will fix the pork again.
