Directions

Preheat oven to 450 degrees. On a rimmedbaking sheet, toss sweetpotatoes extra-virginolive oil and Old Bayseasoning. Bake until potatoesare deep golden brown on all sides,about 30 minutes, flipping halfwaythrough.

Neither my husband nor I would ever have thought of using Old Bay with sweet potatoes, but scanning the spices in it makes it seem a good fit: cinnamon and the like. Of a 6 1/2 quart baking dish, only enough was left to cover the bottom.
