  • 2 tablespoons olive oil, plus more for baking sheet 2 tablespoons plus 1 teaspoon honey mustard 2 tablespoons ketchup 1 pound ground beef chuck 1 large egg, lightly beaten 1/2 cup panko (Japanese breadcrumbs) 1 cup shredded white cheddar (about 4 ounces) Coarse salt and ground pepper 1 pound white new potatoes, scrubbed and quartered 1 tablespoon red-wine vinegar 1 head Boston lettuce, torn into bite-size pieces

Directions

Preheat oven to 450 degrees, with racks in upper and lower thirds. Brush a rimmed baking sheet with oil. In a small bowl, mix together 2 tablespoons mustard and ketchup.

In a medium bowl, combine beef, egg, panko, 1/2 cup cheddar, 1/2 teaspoon salt, and teaspoon pepper. Form into four 2-by-4-inch loaves; place on baking sheet. Brush with mustard mixture; top with remaining 1/2 cup cheddar. On another rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper.

Transfer meatloaves to upper rack of oven, and place potatoes on lower rack. Bake until loaves are cooked through, 15 to 20 minutes, rotating sheets after 10 minutes. Remove loaves from oven; continue to roast potatoes until tender, about 5 minutes.

Meanwhile, in a large bowl, whisk together remaining tablespoon oil, remaining teaspoon mustard, and vinegar; season with salt and pepper. Add lettuce to bowl, and toss. Serve meatloaves with potatoes and salad.

Boyfriend hates cheese, so I replaced it with some Frank's Red (hot sauce that's not really hot, just flavorful) and some garlic powder to mimic the high notes of the cheese. I served it with mashed potatoes and peas. The alteration came out way better than expected, it was a huge hit, and will be making it again!

I ran this recipe with low-fat cheddar (which is what i would use) and regular breadcrumbs (panko is not in the database - but if I had a can to see the label, I could add it to the database).     Martha Stewart Member     Rating: Unrated       03/04/2008   There are a couple of ways to lighten up this recipe - you could try using a leaner cut of meat like ground sirloin or even ground chicken/turkey. However, since these cuts are leaner, the end product will be dry. To combat this, I suggest adding some finely chopped veggies such as onions or shallots, bell pepper of any color, zuccini or squash, etc. I just throw some in the mini food processor until they are practically pureed, this way you will not need to sautee prior to mixing in.

CAN ANYONE COMMENT ON THE RECIPE ITSELF?? - DID ANYONE MAKE THIS RECIPE?—-AND DID THEY LIKE IT?

I also find that if I use oatmeal instead of bread crumbs it is jucier when using a leaner cut of beef.

I love the idea of the vegetables pureed and added to the load. Great idea.

I have a recipe calculating program I purchased, but the one at sparkrecipes.com is actually better. I ran this recipe with low-fat cheddar (which is what i would use) and regular breadcrumbs (panko is not in the database - but if I had a can to see the label, I could add it to the database). I run most recipes through that if the cookbook doesn’t provide info!

There are a couple of ways to lighten up this recipe - you could try using a leaner cut of meat like ground sirloin or even ground chicken/turkey. However, since these cuts are leaner, the end product will be dry. To combat this, I suggest adding some finely chopped veggies such as onions or shallots, bell pepper of any color, zuccini or squash, etc. I just throw some in the mini food processor until they are practically pureed, this way you will not need to sautee prior to mixing in.

I thought it was great that somebody had the nutritional values of that meal and shared it. It sounds like a good meal, but makes it more enjoyable if I know whether I want to invest the calories in it or not.

bluroses, where did you find the recipe calculator? i make most of my meals from scratch and have a hard time figuring out the calories i’m eating. just trying to watch my salt intake and loose some weight. 169.35 calories per serving ain’t bad for this recipe! thanks

This enables us to make informed choices about what to eat, which helps us lead happier lives, which leads to more enjoyment of life. No harm in providing information. Peace.
