Ingredients
- 1 tablespoon olive oil 1 medium onion, chopped 2 cloves garlic, minced Coarse salt and ground pepper 2 tablespoons tomato paste 1 pound (about 2 bunches) collard greens, stalks removed, leaves coarsely chopped 1/2 teaspoon dried thyme 1/4 teaspoon red-pepper flakes 2 cans (19 ounces each) white beans, rinsed and drained 1 can (14 1/2 ounces) diced tomatoes, in juice Grated Parmesan, for serving (optional)
Directions
In a large saucepan, heat oil over medium. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion begins to soften, 5 to 6 minutes. Add tomato paste, and cook, stirring, until onion is coated, about 30 seconds. Add collard greens, thyme, and red-pepper flakes. Cook, stirring, until collards start to wilt, 2 to 4 minutes.
Place 1/4 of beans in a bowl, and mash them with the back of a spoon (this will help thicken soup). Add all the beans to the pan, as well as tomatoes with juice and 4 cups water. Bring to a boil; reduce heat, cover and simmer, until collards are tender, 10 to 15 minutes. Season with salt and pepper; serve with grated Parmesan, if desired.

Martha Stewart Member Rating: 5 stars 05/07/2019 I loved this version of minnestrone far more than zucchini or green beans. I had a mixture of kale and collards from my garden. This is so good. I made the cannellini beans in the instant pot first so we didn't have to wait overnight. Low cost, great flavor!! Don't forget good bread! Thankfully we had sourdough boule leftovers in freezer. Martha Stewart Member Rating: 5 stars 12/31/2017 We love this soup, have made it many times. I use an extra can of diced tomatoes and an extra of beans so there is enough for two days. Lovely with good bread. Martha Stewart Member Rating: Unrated 01/22/2008 This soup was an easy way to incoporate very healthy ingredients into a delicious, and hearty soup. I decided to use stock to make it richer -combined with bread it was a great meal Martha Stewart Member Rating: Unrated 01/21/2008 Wonderful and easy soup with excellent flavor. I used kale. This is a keeper! Martha Stewart Member Rating: Unrated 11/17/2007 its yummilicious (yum-i-li-shus). its very good and delicious. As I was watching the episode it looked very good so my friends and I made it the next day we're planning to make it for Thanksgivig as a second coarse. I absolutely love youre recepies and all the thing you sell at Macy's Thanks Martha Stewart Member Rating: Unrated 11/10/2007 Great soup! Especially if you love collard greens. I even cheated and found chopped collard greens in a bag in the veggie section. Amazingly good for you, too, and so so easy!Martha Stewart Member
