  • 2 cups mashed potatoes
  • 1 large egg
  • 1/4 cup grated Parmesan
  • Coarse salt and ground pepper
  • 1 teaspoon vegetable oil

Directions

In a large bowl, stir together mashed potatoes, egg, and Parmesan. Season with salt and pepper and mix well to combine (mixture will look wet). In a large nonstick skillet, heat vegetable oil over medium-high.

In batches, drop heaping spoonfuls of potato mixture into skillet, pressing with a spatula to flatten slightly. Cook until golden brown on bottom, about 3 minutes. Gently flip and cook until golden brown on other side, 3 minutes. Repeat with remaining potato mixture and more oil.

                Definitely not traditional. It was way too mushy and disintegrated as soon as they hit the oil. You have to add Matzo meal or flour to make it stick together. I had flour on hand, so I added a 1/4 cup to the potato/egg mixture.

                My Mom made these when I was a kid 50+ years ago! I add some caramelized onions and garlic to them, but use your imagination and make them your own! Cheese inside and/or out, chives, parsley, mushrooms, bacon, sour cream, a little Paprika. These make a great side dish to most any meal, or they can be enjoyed on their own. Sometimes, I will 'flatten' them a little for more crispness and serve with sour cherries over top, served with a breaded pork loin chop, glazed carrots, and a salad! Hint: You don't 'have' to fry these either! Just put the mix in a small casserole dish, sprinkle with cheese and bake for 30 minutes.

                When I mash the potatoes, I add sour cream anyway.  I fried the pancakes in 1 T salted butter and 1 T olive oil. Nothing else is needed except some leftover turkey and cranberry sauce!

                I like add baccon biy's ans serve with eggs over easy for breakfast.
                Poached eggs are also good.

                Definitely not traditional. It was way too mushy and disintegrated as soon as they hit the oil. You have to add Matzo meal or flour to make it stick together. I had flour on hand, so I added a 1/4 cup to the potato/egg mixture.
