Directions

Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet; toast, tossing occasionally, until golden, 8 to 10 minutes; cool.

In a medium bowl, whisk yogurt, cilantro, lime juice, chutney, mustard, turmeric, and cayenne; season with salt and pepper. Add chicken and mango; toss. Serve on spinach, sprinkled with toasted coconut.

Or maybe half the amount of fresh basil since basil has such a strong flavor. A citrus or mint basil might be good too.

If you have a flat griddle and you’d like a easier, more economical way to brown your coconut to an even, pretty golden color, - spread it evenly and stir frequently till you get the hue you desire.
