Cook’s Notes To shred roasted chicken, remove the meat from the bone, then pull it apart into thin pieces with two forks or your fingers.

Directions
Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet; toast, tossing occasionally, until golden, 8 to 10 minutes; cool.
In a medium bowl, whisk yogurt, cilantro, lime juice, chutney, mustard, turmeric, and cayenne; season with salt and pepper. Add chicken and mango; toss. Serve on spinach, sprinkled with toasted coconut.

Or maybe half the amount of fresh basil since basil has such a strong flavor. A citrus or mint basil might be good too. Major Grey’s is a brand of bottled chutney. It’s a relish of sorts, with mango, raisins, curry, etc. Yummy, in other words. Usually near the mustard, ketchup and other condiments.
What is Mayor Grey’s Mango Chutney?
If you have a flat griddle and you’d like a easier, more economical way to brown your coconut to an even, pretty golden color, - spread it evenly and stir frequently till you get the hue you desire.
make your own or buy it in ethnic stores for the mango chutney sub curry powder for the mustard

personally I would like an alternate ingrediant for the mustard. I can not tolerate it unless it is the tiniest bit of dry. if I can taste it I can’t eat it.
