Ingredients

Ingredients

  • 4 tablespoons butter 4 scallions, white and green parts separated, thinly sliced 1 tablespoon grated lemon zest plus 5 to 6 tablespoons fresh lemon juice (from 2 lemons) 1 pound broccoli, cut into small florets, with stalks peeled and sliced Coarse salt and ground pepper 1 pound large, frozen, peeled, and deveined shrimp, thawed and patted dry 1 package (10 ounces) frozen peas

Directions

In a large skillet with a lid, melt 2 tablespoons butter over medium. Add white part of scallions, lemon zest, broccoli, and 1/2 cup water; season with salt and pepper, and toss. Cover, and cook until broccoli is bright green and just beginning to soften, 3 to 4 minutes.

Add shrimp and peas. Cover, and cook, tossing occasionally, until shrimp are opaque and peas are tender, 4 to 6 minutes.

Add lemon juice, green part of scallions, and remaining butter; season with salt and pepper. Toss gently and serve.

Martha Stewart Member Rating: Unrated 04/13/2011 This was a very easy dish to make. I served it with brown rice but it did not keep me satisfied. I will add more spice in the future.

Martha Stewart Member Rating: Unrated 01/15/2011 This is delicious, I expected too much lemon taste but it's very light and fresh. I have substituted green beans for broccoli. Next time I will serve it over brown rice to see if it enhances it at all. I will update when I do.

Martha Stewart Member Rating: Unrated 08/26/2008 My family loves this recipe. I think it is easy to make, and you can cut down on prep time even more if you buy the shrimp already peeled and deveined. I left out the lemon zest once when I didn't have a fresh lemon,

Martha Stewart Member Rating: Unrated 06/09/2008 I made this for a friend's family after she had surgery. After her teenage boys raved about it she keep stealing small bites even though she wasn't feeling well. Her Mom also tasted it and raved.

Martha Stewart Member Rating: Unrated 04/02/2008 My family enjoys seafood, especially shrimp. This recipe was very good. I would omit the peas next time as I found the scallions and broccoli were enough vegetables in the dish. The shrimp had a nice light flavor because of the lemon..
