Ingredients

  • 1 tablespoons plus two teaspoons extra-virgin olive oil 2 cloves garlic 2 cups cherry tomatoes 1 1/2 teaspoons fresh thyme leaves 1 pound boiled, chopped kale leaves Coarse salt and ground pepper

Directions

In a large skillet, heat 1 tablespoon olive oil over medium. Add garlic cloves, thinly sliced, and cook, stirring, until fragrant, 30 seconds. Add cherry tomatoes, quartered, and fresh thyme leaves. Cook until tomatoes begin to break down, 2 minutes. Add kale and cook until heated through, 2 minutes. Season with salt and pepper. Drizzle with 2 teaspoons oil.

    Martha Stewart Member     Rating: 5 stars       02/07/2019   This was amazing! Followed the instructions, expect I used a full container Trader Joe's Bruscetta sauce instead of cherry tomatoes (another reviewer suggested it). OMG! Sooo good. Topped with freshly grated parmesan.

I was really excited when I made this tonight, but was quickly disappointed upon tasting it. I am a good, so I know that the problem wasn't with me. The title of the recipe says it all, there is no depth to the flavor. I was left with two choices: Toss it in the trash or "doctor" it up, since I knew my family would not eat it. I quickly threw together a white sauce (healthy, I know), which helped. I will not be making this again.

I usually have a salmon stake or some meat on the side if I'm feeling carnivorous. I just chop up some vine ripened tomatoes if I don't have cherry tomatoes...and as always...organic tastes best!

This was my first time eating kale and I was really concerned that I wouldn't like it, but the tomatoes and garlic added tons of flavor. I can't imagine ever sauteing kale without the tomatoes. I also added onion and used parsley flakes instead of thyme because I didn't have any on hand- I can imagine experimenting with more additions, like peppers. This will definitely be a repeat dish through the fall and winter!!

I enjoyed it so much and will definitely make it again! It will be added to my repeat list. I used a couple pinches of dried thyme but that was my only change. Simple recipes that are already vegan and don't need any changes or things like cheese taken out of them are awesome and super healthy and I hope to find more of them on your website!!! :) So good :)

Wasn’t sure I would like this recipe. I don’t like a strong garlic flavor. But I was really surprised how awesome this recipe was. I enjoyed it so much and will definitely make it again!
