- 4 (8-inch) flour tortillas 3 tablespoons canola oil 10 large eggs 1/2 teaspoon coarse salt 1/4 teaspoon ground pepper Sauce Rancheros 1 cup shredded Monterey Jack cheese Diced avocado, sour cream, and chopped fresh cilantro, for garnish
Directions
Preheat oven to 400 degrees. Brush tortillas on both sides with 2 tablespoons canola oil; lay on a baking sheet. Bake until crisp and brown around edges, 7 to 10 minutes.
In bowl, beat eggs with salt and pepper. Heat remaining tablespoon oil in large skillet over medium-low heat. Cook eggs, stirring, until set but still moist, 6 to 8 minutes.
Place tortillas on plates; top with eggs, sauce rancheros, and Monterey Jack. Garnish with avocado, sour cream, and cilantro.

It needs just a red sauce from dried chilis not whatever you called that sauce, also corn tortilla is preferred. If it was indeed actual nutritional info that maryanneminich was looking for, I've never been able to find that info on this site either (calories, fat grams, etc). If Andumelon thinks "nutritional info" means "ingredients" then I would suggest maybe it 's them that needs a helpful visit from Martha Stewart. THAT SAID this is a good recipe. Huevos Rancheros are not like this… It’s a fried egg over a fried corn tortilla topped with salsa… Never with sour cream or avocado…

Wow, that was rude Andumelon. Nutritional information is more than just figuring out what’s in the recipe. I think that’s what Maryanneminich wanted. And I don’t see a link for nutritional info. like calories, fat, cholesterol, sugars, etc.

Maryanne. Nearly every ingredient in every recipe on this site will have nutritional information on it. It takes literally seconds to figure out what is in all of these recipes. Would you like Martha Stewart to come over and cook this meal for you as well?
