- 1/2 cup honey 2 tablespoons rice vinegar 2 tablespoons soy sauce 4 garlic cloves, minced 2 tablespoons peeled and finely grated fresh ginger Coarse salt and ground pepper 8 bone-in, skin-on chicken thighs (about 3 pounds total)
Directions
Preheat oven to 475 degrees. Line a rimmed baking sheet with foil. In a large bowl, mix honey, vinegar, soy sauce, garlic, ginger, 1 tablespoon salt, and 1/2 teaspoon pepper. Add chicken and toss to coat. Transfer chicken and sauce to baking sheet.
Bake chicken, skin side up, basting occasionally with pan juices, until well browned and cooked through, 25 to 30 minutes. Serve chicken drizzled with pan juices.

I also use a micro-plane grater/zester to grate the garlic and the ginger. I can't imagine anyone saying this doesn't have good flavor if you use the correct amount of ginger and garlic. I did have a problem with my cheap baking sheet warping and the juices bubbling over and onto the bottom of the oven causing some smoke, but it was minimal and didn't effect the taste. The honey mixture bubble up and over the sides of the pan burning the inside of the oven and causing a lot of smoke. We could not even eat the chicken because of the smoky smell. I love this recipe! If you have problems with it bubbling over, I use a glass baking dish and line it with foil and have absolutely no problems.
