  • 1/3 cup honey 1 tablespoon balsamic vinegar 2 teaspoons dried thyme Coarse salt and ground pepper 1 chicken (about 3 pounds), cut into 8 pieces

Directions

Preheat oven to 475 degrees. Line a rimmed baking sheet with foil. In a small bowl (or glass measuring cup), whisk together honey, vinegar, thyme, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.

Place chicken pieces on prepared pan; brush with honey glaze to coat. Roast, brushing twice with glaze (do not baste during last 5 minutes of cooking), until chicken is deep brown on the outside and opaque throughout, 20 to 25 minutes.

    Martha Stewart Member     Rating: 4 stars       07/08/2018   We used this glaze on chicken breasts and cooked it on the grill. It came out great. I think we may have cooked it a little too long because the smaller pieces were dry, but the chicken is very tasty.

However, I did baste through-out the cooking process and as the directions say, don't...well, don't because it just blackens the chicken. It's a nice sweet chicken recipe. The only addition I made was I also added dry oregano...but that's because I'm Greek and I feel all chicken should have oregano...I used 1 tsp. Everyone raved!

I just threw everything together and it came out quickly. I didn't have any thyme, so I used poultry seasoning; it worked well. I want to try it as intended though. My only complaint was the smell, the burnt honey and balsamic smell wasn't great. I'd recommend it!
