Much lighter than deviled eggs and they make a very pretty platter. I double the mayo topping and use a teaspoon on each half of egg to resemble a deviled egg. I slice the radishes very thin and stand up one slice on the topping, then spread several slices around the eggs along with the herb garnish. They are great for leftovers the next day. Such a perfect low carb appetizer for those who are watching carbs and proteins. I have shared this recipe with many friends and dinner guests. Directions
Place eggs in a medium saucepan, cover with cold water, and bring to a boil. Remove from heat; let eggs stand in the water for 12 minutes. Transfer eggs to a bowl of ice water to cool for 10 minutes. Peel eggs and cut in half lengthwise; arrange in a serving dish.
In a small bowl, whisk together mayonnaise, dill, tarragon, chives, and scallions. Place 1/2 teaspoon herb mayonnaise on each egg half; serve with radishes, black bread, and coarse salt.
