  • 8 large eggs 2 avocados, preferably Hass 1/4 teaspoon coarse salt Freshly ground pepper 1 tablespoon extra-virgin olive oil

Directions

Cover eggs with cold water in a large saucepan; bring to a boil. Remove pan from heat. Let eggs stand, covered, 8 minutes; transfer with a slotted spoon to an ice-water bath, and let cool. Peel eggs. Separate yolks from whites (reserve yolks for another use).Tear whites into 1-inch pieces; divide among four bowls.

Halve and pit the avocados. Using a spoon, scrape out pieces; divide among bowls with egg whites. Divide salt among servings, and season with pepper. Drizzle each serving with 3/4 teaspoon oil.

Make sure you ditch the yolk (for your homemade mayonnaise recipe) I buy my eggs in bulk 3-7 dozen and boil 8 at a time. You can’t go wrong because egg whites are like 5 calories and you will burn that within 30mins of watching TV. Avocados are equally awesome, I find myself eating a whole one buy myself without any salad or rice; which is the way it was introduced to me. My girlfriend thought I was weird for marrying the avocado and egg whites until Martha validated my idea : )  
    
    Martha Stewart Member     Rating: Unrated       01/10/2014   Recipe seems simple and easy that even a child could do it and "this is a good thing"...My only complaint is the recipe tells you to put the yolks away for something else...but the picture definitely shows the yolks being used. I know this is anal and I apologize for it, but there are those out there who rely on the pictures as much as the written recipe...besides...I raise chickens for their eggs...LOL
