Ingredients
Ingredients
- Coarse salt and ground pepper 3/4 pound fettuccine 2 cups packed fresh parsley 1/4 cup walnuts, plus more chopped for serving 1/4 cup grated Parmesan, plus more for serving 1 garlic clove 1 tablespoon fresh lemon juice 1/4 cup olive oil 5 ounces baby spinach
Directions
In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta, and return to pot.
In a food processor, puree parsley, walnuts, Parmesan, garlic, lemon juice, and 2 tablespoons water until a paste forms. With machine running, add oil in a thin stream; process until very smooth, about 1 minute. Season pesto with salt and pepper.
To pasta in pot, add pesto, 1/4 cup pasta water, and spinach; toss to combine. Thin with pasta water as needed. Serve sprinkled with walnuts and Parmesan.

Martha Stewart Member Rating: Unrated 02/13/2012 So delicious & easy to make! I used whole wheat fettucine, I think it adds a heartier flavor. Perfect with the spinach & walnuts. I also used 1 cup parsley & 1 cup nettle just because it's so good for you. YUM!!!!! :) Happy I came across this recipe.
Martha Stewart Member Rating: Unrated 03/11/2010 We loved this! Made it with whole-wheat linguini. Very easy to put together. I served it with roasted drumsticks.
Martha Stewart Member Rating: Unrated 02/27/2010 Hi kitchencartsromona ! I love cilantro too but because it's such a strong flavour I wouldn't recommend substituting it for all the parsley - try 1/2 and 1/2 and see what you think.
Martha Stewart Member Rating: Unrated 02/25/2010 I am wondering if I could substitute cilantro for parsley. My family likes that flavor over parsley.
