  • 1 cup all-purpose flour, (spooned and leveled) 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 2 tablespoons unsalted butter, melted, or vegetable oil 1 large egg 1 tablespoon vegetable oil Assorted toppings, such as butter, maple syrup, confectioners’ sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

Directions

Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.

In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).

Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.

For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).

Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You’ll have 12 to 15 pancakes.) Serve warm, with desired toppings.

  • Step 1 BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk. Step 2 YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk. Step 3 WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk.

YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

    Martha Stewart Member     Rating: 5.0 stars       03/21/2020   in my third trimester of pregnancy and had a sudden craving for pancakes with maple syrup, macerated strawberries and whipped cream. whipped these up in no time with little mess but found they were a little bitter. i figured it was the baking soda and went back to review the recipe and seen that it called for baking POWDER (pregnancy brain anyone?) also added a little vanilla because everything is better with vanilla! recommend these highly but use less baking soda or try the recommended baking powder lol

Maybe you all should step away from the kitchen if you can't even make these. Oh, and the one saying she left her brains in prison? Where did you lose yours? Maybe learn to read. The oven was to keep the cooked pancakes warm while you finished the other batches. Especially if you were only using a skillet to make them and not a long griddle.

The pancakes puff up so nicely on the griddle and the result was the perfect spongey, fluffy cake. While cooking, I tossed a 1/2 cup of frozen berries into another pan (use a little water to deglaze) and this creates a tart, but sweet, berry topping for the pancakes. I wish I had a picture to post, but it turned out so pretty and delicious. Will make again!

I follow the recipe to the letter and they always turn out perfectly. These are hands down the best and easiest pancakes I have ever made. No disrespect to those who have not have luck with the recipe, but you must be doing something wrong. How else could so many of us have success with the recipe if not?

The quantity of pancakes was very minimum I had to double the recipe to make 8 pancakes! But the people I made them for enjoyed them and liked the taste. I used all organic ingredients and coconut oil instead of vegetable oil. Hoping to have fresh blueberries for next time. Anyone giving this recipe a bad review must not know how to cook. I have yet to find a single person who hasn't loved it. The secret to a fluffy pancake is in mot over mixing. The batter will be lumpy and unsightly, but the end result will be pure deliciousness. You won't even need syrup. I'd give this recipe 11 stars if I could.

I soon realized that was a mistake when I flipped the pancake. Some parts were COMPLETELY burned and others were COMPLETELY raw!! I tried putting only the raw part on the griddle. That didn't work. Then I tried making the batter thinner by putting less on and spreading it out more. That didn't work either. So then I tried leaving it on for less time. And it was barely even brown. Unlike the mixes I use that give it a nice golden brown color. Would not reccomend

I usually make it for my girls when they have sleepovers and now their friends flat out ask for them when they make sleepover plans. I usually double the recipe, substitute whole wheat flour for half the flour an add a cap full of good vanilla extract. Sometimes I also use coconut oil in place of butter but only when I know no one has a peanut or tree nut allergy (sleepover friends; not all coconut oils are allergy safe!) Sometimes we add chocolate chips, banana slices or blueberries in the batter or sliced fresh banana or strawberries on top. Even plain, these pancakes are sooooooo good!

This recipe is so basic that there's plenty of leeway! Sometimes I substitute half the flour with whole wheat flour, throw some oats in, and add a little extra milk. They always taste delicious and this recipe is super quick!  
    
    Martha Stewart Member     Rating: 5 stars       02/16/2018   The only thing that I changed in the recipe was that I through all of the dry ingredients in the bowl and mixed them, then instead of dirtying up a second bowl, I added the wet ingredients straight into the bowl with the dry ingredients, then I mixed everything up together. I let the batter sit about 10 minutes while my pan got nice and hot and the batter was real thick when I started cooking. There is no vanilla in this recipe, and I probably would have added some, but I am out. And still, this is the BEST pancake recipe I have ever used. I couldn't believe how simple it is and it could be so perfect. I love things simple and awesome. This made an A+ with both. This is a keeper and the only pancake recipe I will be using from now on. I do not like relying on boxed foods. I would rather make from scratch. Now that I have this recipe, I can experiment with healthier flour options as well. I doubled it for the 5 of us who were eating and we had about 4 nice sized pancakes left over.

I'm gluten-free, so I used Bob's Red Mill All Purpose Gluten Free Flour and added 3/4 tsp xanthan gum. Also, I separated my egg and whipped the white, folding it in after everything else was mixed. The batter seemed thin at first, but after a few moments in the bowl it thickened up. Whipping the egg whites was a new trick for me and I do think it made the pancakes fluffier. I'll be experimenting with this recipe some more.

I followed the recipe exact and they were fluffy and delicious. Typically, I would have preferred to use real butter in the recipe, but I am out, so I used vegetable oil. I did add some chocolate chips to half of it...Amazing!

I don't give 5 stars, because they aren't very fluffy or voluminous. I've determined that doubling the salt to 1 teaspoon and adding a teaspoon of baking soda (in addition to the 2 teaspoons of baking powder) results in a much fluffier and more substantial pancake that is just as easy!

They were fluffy and kept their shape. When reading reviews remember there are many different factors and any great recipe can turn out bad from user errors! If you follow this recipe your pancakes will be great. For the review that labeled these as bland? Flour, milk and eggs don't scream out "flavor" it is what you put on the pancake or the extra flavoring you add to the batter. This was a great recipe.

Today is my 5 year old's birthday, and I made these pancakes hoping it would be a nice surprise. Pancakes are his favorite! Why didn't I use our standard recipe!!?? Ugh! These pancakes were so thin! Nothing like the picture indicates, and I followed the recipe exactly!

Even at that, the recipe was the right pancake batter consistency before we added it all. Which means that yes, 1/2 tsp of salt is too much. They were a little too salty before adding syrup.They rose just fine, in fact, they were really thick and fluffy, but (probably since we used only about half the recommended milk) the recipe only made 2-3 pancakes. Not an epic fail, but surely not a family favorite. Does anyone test these recipes before posting?

They didn't hold their shape whatsoever, and were dry, salty and overall unappetizing. We had to preform major surgery to the entire recipe to make it semi-edible. You should never, under any circumstance, make these pancakes, unless you are doing a presentation on the handling of poisonous substances.

I used white whole wheat pastry flour and started with 3/4 cup milk (I used goat milk) and added a little more, but not a full cup. many scratch pancake recipes wind up seeming slightly rubbery - these were just right. the recipe called for more sugar than I thought was right, but they tasted (and browned) amazing. the recipe made 5 medium (5" or 6") pancakes.

And before anyone asks; yes, I used fresh baking powder, I am familiar with the effects of over mixing pancake batter s I mixed the batter just enough to make everything wet, and I cook on medium low heat, which is where just about any other pancake cooks perfectly on my stove. I ended up retrying the recipe and added about an extra half cup of flour, an extra egg, and vanilla, and lo and behold they were fine. Cooked up fairly thick and fluffy and actually had some taste to them. Maybe this is supposed to base batter that is easy to modify, hence the name of the recipe, but man, there needs to be a warning or something. As the recipe is listed these are just awful.

The second one was golden brown on the edges as I added a bit of butter... After every couple of pancakes, added more butter to skillet. We topped with organic maple syrup and Devonshire cream. Thought we'd died and gone to Heaven. Bliss! The people who say this recipe didn't turn out is because you have to have your skillet hot, melt some butter, put the batter in slowly and not too thick. We are still raving about them! Omg, Amazing.

I've been looking for a good pancake recipe as GF mixes are expensive. I used King Arthur GF cup for cup flour (an all purpose mix), 1/4 cup applesauce for my egg and coconut milk (the Thai stuff in the can) and bacon grease for the melted butter. Turned out fluffy and delish! Did not bubble like pancakes should though so I had to watch closely to flip them.

So my friend came over for a sleep over and we wanted pancake for breakfast but we spent ages arguing over who will make it because NO ONE wants to make them. Then we agreed finally that we’ll all make them and we spent ages finding a recipe and gathering ingredients and measuring carefully and mixing till it was perfect. Then we used a shaper to make the heart shaped and they took ages to make. And now, finally, the Herculean task of making pancakes is over and OH MY GOD they’re SO GOOD I JUST HAD TO WRITE A REVIEW. in my third trimester of pregnancy and had a sudden craving for pancakes with maple syrup, macerated strawberries and whipped cream. whipped these up in no time with little mess but found they were a little bitter. i figured it was the baking soda and went back to review the recipe and seen that it called for baking POWDER (pregnancy brain anyone?) also added a little vanilla because everything is better with vanilla! recommend these highly but use less baking soda or try the recommended baking powder lol

No problems with this recipe at all. Perfect and fluffy. The negative comments are hilarious. Maybe you all should step away from the kitchen if you can’t even make these. Oh, and the one saying she left her brains in prison? Where did you lose yours? Maybe learn to read. The oven was to keep the cooked pancakes warm while you finished the other batches. Especially if you were only using a skillet to make them and not a long griddle.

I tried this recipe last evening when, on a whim, I decided to have breakfast for dinner. The pancakes puff up so nicely on the griddle and the result was the perfect spongey, fluffy cake. While cooking, I tossed a 1/2 cup of frozen berries into another pan (use a little water to deglaze) and this creates a tart, but sweet, berry topping for the pancakes. I wish I had a picture to post, but it turned out so pretty and delicious. Will make again!

I have made this these pancakes (sometimes with whole milk sometimes with buttermilk) more times than I can count. I follow the recipe to the letter and they always turn out perfectly. These are hands down the best and easiest pancakes I have ever made. No disrespect to those who have not have luck with the recipe, but you must be doing something wrong. How else could so many of us have success with the recipe if not?

I tried the recipe and it wouldn’t brown when I put it on the stove and the pancakes were really thin. The quantity of pancakes was very minimum I had to double the recipe to make 8 pancakes! But the people I made them for enjoyed them and liked the taste. I wouldn’t recommend this but it’s not my decision wether you choose to use this recipe or not.

Awesome recipe! Have tried lots and hated most - nice, fluffy, NOT dry pancakes that crisp up on the edges :) Yes!!! I used all organic ingredients and coconut oil instead of vegetable oil. This is the best pancake I’ve ever had. I receive many guests in our B&B and my pancakes are famous. I have yet to find a single person who hasn’t loved it. The secret to a fluffy pancake is in mot over mixing. The batter will be lumpy and unsightly, but the end result will be pure deliciousness. You won’t even need syrup. I’d give this recipe 11 stars if I could.

Worst pancakes ever. I wanted to make homemade instead of using from a box. I soon realized that was a mistake when I flipped the pancake. Some parts were COMPLETELY burned and others were COMPLETELY raw!! I tried putting only the raw part on the griddle. That didn’t work. Then I tried making the batter thinner by putting less on and spreading it out more. That didn’t work either. So then I tried leaving it on for less time. And it was barely even brown. Unlike the mixes I use that give it a nice golden brown color. Would not reccomend

This is my go to recipe! Super easy! I usually make it for my girls when they have sleepovers and now their friends flat out ask for them when they make sleepover plans. I usually double the recipe, substitute whole wheat flour for half the flour an add a cap full of good vanilla extract. Sometimes I also use coconut oil in place of butter but only when I know no one has a peanut or tree nut allergy (sleepover friends; not all coconut oils are allergy safe!) Sometimes we add chocolate chips, banana slices or blueberries in the batter or sliced fresh banana or strawberries on top. Even plain, these pancakes are sooooooo good!

My go-to breakfast recipe! When I half the recipe, the pancakes turn out denser even when I use the smallest egg in the carton. This recipe is so basic that there’s plenty of leeway! Sometimes I substitute half the flour with whole wheat flour, throw some oats in, and add a little extra milk. They always taste delicious and this recipe is super quick!

The only thing that I changed in the recipe was that I through all of the dry ingredients in the bowl and mixed them, then instead of dirtying up a second bowl, I added the wet ingredients straight into the bowl with the dry ingredients, then I mixed everything up together. I let the batter sit about 10 minutes while my pan got nice and hot and the batter was real thick when I started cooking. There is no vanilla in this recipe, and I probably would have added some, but I am out. And still, this is the BEST pancake recipe I have ever used. I couldn’t believe how simple it is and it could be so perfect. I love things simple and awesome. This made an A+ with both. This is a keeper and the only pancake recipe I will be using from now on. I do not like relying on boxed foods. I would rather make from scratch. Now that I have this recipe, I can experiment with healthier flour options as well. I doubled it for the 5 of us who were eating and we had about 4 nice sized pancakes left over.

Made these for Shrove Tuesday and they were fine. I’m gluten-free, so I used Bob’s Red Mill All Purpose Gluten Free Flour and added 3/4 tsp xanthan gum. Also, I separated my egg and whipped the white, folding it in after everything else was mixed. The batter seemed thin at first, but after a few moments in the bowl it thickened up. Whipping the egg whites was a new trick for me and I do think it made the pancakes fluffier. I’ll be experimenting with this recipe some more.

As is this recipe is pretty good. It makes good tasting, super easy and quick pancakes. I don’t give 5 stars, because they aren’t very fluffy or voluminous. I’ve determined that doubling the salt to 1 teaspoon and adding a teaspoon of baking soda (in addition to the 2 teaspoons of baking powder) results in a much fluffier and more substantial pancake that is just as easy!

Oh my goodness. My husband made this for us this morning and they were great! He added chopped apples, cinnamon and vanilla. They were fluffy and kept their shape. When reading reviews remember there are many different factors and any great recipe can turn out bad from user errors! If you follow this recipe your pancakes will be great. For the review that labeled these as bland? Flour, milk and eggs don’t scream out “flavor” it is what you put on the pancake or the extra flavoring you add to the batter. This was a great recipe.

Thoroughly mediocre recipe. We followed another reviewer’s suggestions and started with only 3/4 cup of milk. Even at that, the recipe was the right pancake batter consistency before we added it all. Which means that yes, 1/2 tsp of salt is too much. They were a little too salty before adding syrup.They rose just fine, in fact, they were really thick and fluffy, but (probably since we used only about half the recommended milk) the recipe only made 2-3 pancakes. Not an epic fail, but surely not a family favorite. Does anyone test these recipes before posting?

These might have been the worse pancakes I ever made. They didn’t hold their shape whatsoever, and were dry, salty and overall unappetizing. We had to preform major surgery to the entire recipe to make it semi-edible. You should never, under any circumstance, make these pancakes, unless you are doing a presentation on the handling of poisonous substances.

Previous attempt with another recipe was a disaster. This recipe made the perfect, fluffiest pancakes and now I am wondering if these pancakes were better than the ones I had at a cafe. I must say you have nailed the ingredients and the timing. I will try them again soon. Thanks for the recipe.

I really don’t know how I feel about these pancakes. They were very blan and at first very thin. I added chocolate chips and a little bit more flour to make them thicker and sweeter and THATS when they turned out great. I really do recommended adding flour and some kind of sweet topping!!

These pancakes were great! I did modify the recipe a little bit, adding a 1/2 tsp of vanilla and using almond milk, came out fantastic!

These were by a wide margin the worst pancakes I’ve ever had. They came out crepe thin, dense/rubbery, and flavorless. And before anyone asks; yes, I used fresh baking powder, I am familiar with the effects of over mixing pancake batter s I mixed the batter just enough to make everything wet, and I cook on medium low heat, which is where just about any other pancake cooks perfectly on my stove. I ended up retrying the recipe and added about an extra half cup of flour, an extra egg, and vanilla, and lo and behold they were fine. Cooked up fairly thick and fluffy and actually had some taste to them. Maybe this is supposed to base batter that is easy to modify, hence the name of the recipe, but man, there needs to be a warning or something. As the recipe is listed these are just awful.

These were the best pancakes I’ve ever made. The first one I had to throw out because the skillet was not hot enough. The second one was golden brown on the edges as I added a bit of butter… After every couple of pancakes, added more butter to skillet. We topped with organic maple syrup and Devonshire cream. Thought we’d died and gone to Heaven. Bliss! The people who say this recipe didn’t turn out is because you have to have your skillet hot, melt some butter, put the batter in slowly and not too thick. We are still raving about them! Omg, Amazing.

These are on spot, my family loved them and because I am diabetic, I left the sugar out to enjoy a couple. (Still have to watch for carbs!) Delicious! I will make them again for my grand-kids.

OMG -I have to agree with allaroundthea comment below, These pancakes my dog would not even eat. He actually threw them up. They have no taste, I just had an arguement with my wife about the authenticity of Martha being a chef. I followed the recipe to a tee. Martha go back to the drawing board on this one.

these were the [filtered]ty-est pancakes that I have ever made. I swear to god every time I come to this website I die a little inside. I would rather stick hot pins in my eyes than make any of these stupid ass hunks of wheat. kms. also, brown sugar will make ur pancakes taste great

I did according to recipe but I used olive oil because that’s all I had and the batter fermented ! It proofed so I had to whisk it again ! The batter tasted awful but the pancakes were fine. Go figure. What could have happened ?

Soooo didn’t have any AP gluten free flour so I used GF CAKE FLOUR instead! These were super quick, super easy and very delicious! A KEEPER, thanks Martha!!!

My husband is allergic to everything. He’s a celiac so no gluten he’s allergic to dairy and eggs and soy and a bunch of other things. I’ve been looking for a good pancake recipe as GF mixes are expensive. I used King Arthur GF cup for cup flour (an all purpose mix), 1/4 cup applesauce for my egg and coconut milk (the Thai stuff in the can) and bacon grease for the melted butter. Turned out fluffy and delish! Did not bubble like pancakes should though so I had to watch closely to flip them.
