Ingredients

  • 1 1/2 cups sweetened shredded coconut
  • 3 drops pure almond extract
  • 3 3/4 ounces semisweet chocolate, melted

Directions

Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper, and spread coconut in a single layer on parchment. Place in oven until golden and toasted, about 10 minutes, stirring occasionally to color evenly. Remove from oven; let cool completely.

In a medium bowl, combine toasted coconut, almond extract, and melted chocolate. Stir gently until combined. Press about 1 tablespoon coconut mixture onto a parchment-lined baking sheet. Repeat with remaining mixture. Place in the refrigerator until cookies are set, about 20 minutes. Keep in refrigerator until ready to serve.

                These sound just like one of my favorite Fanny Farmer candies (although I suspect theirs had more chocolate in them).

                My mom made something similar, but used chow mein noodles. We fashioned them into nests and filled with mini jelly beans for Easter. Other times we just dropped by spoons full. The noodles made them nice and crunchy and were always a huge hit.

                You don't have to use the oven at all if you toast the coconut in a dry skillet. Just be careful to watch it so it doesn't burn, and remove from skillet to cool or it will continue to cook.

                I would like to try these,great for the kids.
                I think adding cereal make them more crunchy and nutritious, and it won't need baking

                I have also seen these done with a well in the centre and three mini Cadbury speckeld eggs in the middle. They were adorable. We add rolled oats to the mixture, as well.

                will have to try these - am 50   we used uncooked oatmeal - did have to bake in oven, but only til chocolate melted - so there is some baking/cooking involved - still am going to give a try

                callidog, I love my kitchen scale ( it is by OXO ) I got at bed,bath and beyond.  it weighs lbs and grams, tares , lighted readout,  auto off.  I check mail and small packages I send as well as cooking and portion control.

                Ooooh, these would be like the best parts of a lamington! 
                Novice question: the 3 3/4 oz of chocolate -- is that by weight or can I pour some choc chips into a measuring glass??

                Oh,my gawd. I'm 40, and back when I was a wee girl, Mum would make us these delicious Hairy Eyeballs (don't knowwhere the name came from). Wow. This takes me back a few decades. And my siblings and I were just talking about these very cookies over Christmas dinner, too.

                Actually, if you don`t find toasted shredered coconut to buy you can always toast it in the microwave or even on a frying pan. Just don`t bother to refrigerate them, since they will not last until the end of the day. You will probably eat half the amount while you are still making them.

                Mmmm . . . simplicity itself.  Takes me back to a different time and place when schools had real cafeterias with meals cooked on the premises and cafeteria ladies dished up mystery meatloaf.  But, oh, the desserts!  My favorite was certainly the chocolate coconut haystacks -- hefty mounds of fudgie deliciousness.  I was somehow less averse to going to school on the days that they were on the menu.

                As a cute Easter idea... place a well in the cookie center and place a jelly bean - or two or three to make a nest.  Better yet, if you have little ones, let them do it.

                My family likes this using coconut that has not been toasted. reminds them of an "mounds" candy bar.  sometimes I press an almond  in the center and have an "almond joy" in bite size pieces.

                actually it is a no bake cookie because you are not baking the cookie itself just toasting the coconut.

                Funny how these say 'no bake' yet you have to turn the oven on to toast the coconut so obviously there is SOME baking involved. LOL
