- 1/2 cup shredded coconut
- 4 cups old-fashioned rolled oats
- 1/4 cup toasted wheat germ

- 1 cup coarsely chopped almonds
- 1 tablespoon sesame seeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground nutmeg
- 1/2 cup honey
- 8 tablespoons (1 stick) unsalted butter, melted
- 1/2 cup golden raisins
Directions
Heat oven to 350 degrees. Line a baking sheet with parchment, and spread shredded coconut on top. Bake until toasted. Transfer to a wire rack to cool.
Decrease oven temperature to 300 degrees. Line two baking sheets with parchment; set aside. In a large bowl, toss together oats, wheat germ, sunflower seeds, almonds, sesame seeds, cinnamon, and nutmeg. Set aside.
In a small bowl, stir together honey and butter; pour over oat mixture. Stir well. Spread onto sheets. Bake until golden, about 25 minutes. Transfer to a wire rack to cool. Break up granola; sprinkle with raisins and toasted coconut. Store in airtight container.

Love this one! I have had to exchange some of the ingredients because I didn't have everything on hand...ie: didn't have almonds, used pecans instead. left out coconut. still, it was a hit. Looking forward to the next batch! sadly, it doesn't last long with my crew.

I omitted the butter, added more honey for binding, changed sesame seed for Ground flax seed. Not sure I will use coconut, used crandberries instead of rasins. Love it and sooo easy!

I love this granola! I used coconut oil instead of butter and it was out of this world. Everyone wants the recipe.I added nuts according to what amts and type I like. I used pumpkins seeds, almonds and sunflower seeds. I did not measure just added until it looked as I thought it should. I followed the amounts for the oatmeal, honey and coconut oil exactly and the ratio was perfect.

There is about 600 calories in a cup.

.5 cup of granola is about 300 calories. I use about 1/3 of a cup over granola.

There is no reason why you have to have coconut in this granola. You could leave it out, and it would be fine!
