Ingredients

Ingredients

  • 1 cup long-grain white rice Coarse salt 1/2 cup fresh cilantro 2 tablespoons fresh lime juice 1 tablespoon olive oil 1 garlic clove

Directions

In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender, 16 to 18 minutes.

Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.

Then, out of nowhere they stopped making it. I tried several other recipes I found on the Internet, but they weren't very good. This recipe came as a Godsend as it's even better than the boxed AF Rice because I'm using all fresh ingredients. I'm not a huge fan of the greenish color, but the taste more than makes up for it. Thank you!!

It didn't look awesome and green like it does in the picture, though, and I believe it is because I used my blender, like the recipe instructed. I think a food processor would have done a much better job. The blender left very large, unchopped bits of cilantro. That was pretty in its own way, but I was looking forward to GREEN RICE! Oh well. Archer Farms used to make a Cilantro Lime boxed rice that I absolutely loved to serve on Taco Nights. Then, out of nowhere they stopped making it.
