  • 1/2 cup (1 stick) unsalted butter, room temperature 3/4 cup all-purpose flour (spooned and leveled) 1/2 cup confectioners’ sugar 3 tablespoons unsweetened cocoa powder Simple Icing

Directions

Preheat oven to 300 degrees. With an electric mixer, beat butter until creamy. Add flour, sugar, and cocoa; mix just until combined. (Chill dough in the refrigerator 10 minutes if it is too soft to handle.)

Pat dough into an 8-inch round cake pan; press edges down with the tines of a floured fork. Bake until firm, 30 minutes. Immediately score into eight wedges; cool completely. Turn out of pan; break wedges apart. Decorate with icing.

I'm not sure if I went wrong somewhere, but the cookie consistency after baking was a little soft and chewy.     Martha Stewart Member     Rating: Unrated       04/19/2010   Very tasty. This turns out great, but it's not very sweet, and reminiscent of dark chocolate. It is kind of "one note". (I do not favor the idea of icing, but I did not try it. Instead I sunk a chocolate chip in the center of each cut piece and that was good.) But next time I will add a drizzle of orange glaze on top of these. The glaze would add a bit of sweetness, complementary orange flavor, and also a bit of "wetness" to offset the sandy shortbread texture.

I wanted to say, that I printed some MSL recipes yesterday, and the MS Kmart ads are causing it to take both sides of the paper! So, I hand wrote this recipe. My recipe is a little different, and people hold their breath til Christmas because they know they are getting cookies as gifts.

Shortbread is dry and crumbly if you work it too much. Gentle handling of the dry ingredients into the butter is the way to go. My recipe is a little different, and people hold their breath til Christmas because they know they are getting cookies as gifts.
