- Coarse salt and ground pepper 1/4 cup all-purpose flour 8 thin chicken cutlets (about 1 1/2 pounds total) 2 tablespoons olive oil 1 cup reduced-sodium chicken broth 1 can (14 ounces) artichoke hearts packed in water, rinsed, drained, and quartered 2 tablespoons rinsed and drained capers 2 tablespoons butter 8 ounces angel-hair pasta 1/2 cup parsley leaves
Directions
Set a large pot of salted water to boil. Place flour in a shallow dish, and season with salt and pepper. Dredge cutlets, shaking off excess. In a large skillet, heat 1 tablespoon oil over medium-high. Cook chicken in batches, adding remaining oil as needed, until light golden, 1 to 3 minutes per side; transfer to a dish.
Add broth to skillet, and bring to a boil; cook until reduced by half. Add artichokes, capers, and the chicken with any juices. Gently swirl to combine, and bring just to a boil. Remove skillet from heat. Swirl in butter, and cover to keep warm.
Add pasta to boiling water. Cook until al dente; drain. Serve chicken and sauce over pasta, topped with parsley.

Martha Stewart Member Rating: 1 stars 10/29/2019 The only way this will be tasty as a dish (the way it's written, is quite the opposite), is with the addition of garlic, acid and some fat! I added more butter, garlic, lemon zest and some heat (red pepper flakes). I omitted the artichokes all together (I don't like them), but the capers were a must! So, you might as well make chicken picatta and save yourself the trouble of even following this recipe. Yah, issa 'no' for me! I used what I had in my pantry whole wheat angel hair and hearts of palm instead of artichokes. I also did not have any chicken stock so I substituted with half a cup of water and seasoned it with a pinch of garlic & onion powder, salt & pepper. I also added halved cherry tomatoes, once water was reduced and boiling. I loved the chicken crunch on outside, juicy in the middle… I will use this basic recipe again!

I love Martha, she’s great. But this recipe was just ok. I don’t like changing recipes much, but after some reviews, decided it needed more sauce. The whole can of broth was used and reduced, but didn’t thicken, had to add flour. Also needed more salt and pepper to the sauce and the artichokes were just ok. The flavor needed something & definitely needs the sauce doubled. Added a clove of chopped garlic & lemon juice, it still was a little bland. Sun dried tomato & mushrooms? Great idea but…?

I really liked this recipe. To the flour dredge I added garlic, poultry seasoning, paprika, sage and parmesan/romano cheese instead of salt. I also deglazed with white wine. Was very tasty my family was thrilled with it.

I really liked this recipe. It was easy to prepare. I made some changes to this recipe. First I cut up the chicken into pieces. I also deglazed the pan with wine and toss the whole thing together. It was great. Its also good if you need to stretch the recipe for more people. You can add more Angel Hair pasta if you need to.

After cooking the chicken, I deglazed the pan with a splash of white wine before adding the stock. The second time I prepared this dish, I also added mushrooms and a few sun dried tomatoes. Great!

I made this recipe for my family. It was quick, simple and tasted delicious like it could have come from cheesecake factory. A squeeze of lemon at the end is also good.

Made for tonight’s dinner and got a very positive response. Came together quickly. I made the following changes; love artichokes so I doubled the “sauce” ingredients, could only find chicken tenders (they worked great) and since we had one vegetarian, I used vegetable broth and added chicken as a last step to just those plates. Next time I may add some fresh or sun-dried tomatoes.

Made this for the first time last night and its delicious! Only changes I would recommend are adding the juice of half a lemon at the end (just seemed like it needed it) and sprinkle parmesan to boost the flavor even more. Will definitely make this again!

I cannot say enough about this recipe. It is absolutely delicious. Not only does it taste wonderful it was quick and easy to prepare. The hardest thing about it was assembling the ingredients. The chicken broth with the capers and the artichokes was flavorful with just a hint of dill not overwhelming at all. Served over the chicken that was so tender it just fell apart and the pasta it was a meal that even the most finicky eater could enjoy. Thanks LSQ.

This recipe is usually made once a week at our house. When I don’t feel like cooking this is ALWAYS my back up meal and as I mentioned is on our weekly rotation. Very tasty. I add a bit more chicken broth because there is never enough sauce and to thicken it up you have to add a bit of flour.

The family enjoyed this recipe. However, we all agreed that next time it will need the addition of fresh garlic and the sauce needs to be doubled or tripled. There just wasn’t enough of it. I added a touch of white wine, cherry tomatoes and put some shaved parmesan reggiano on the table for those who wanted it. Of course, everyone did! Might be good with pine nuts too!

I have made this recipe many times, except I always use mushrooms instead of artichokes and capers, but otherwise the same. Very yummy, maybe I will give it a try with artichokes. sounds good like that too.

I also make a couple of versions of this recipe and I often add some of whatever is on hand as leftovers (fresh veggies, mostly) to “brighten” it up. It’s the ultimate flexible dish! I use fresh basil and oregano in place of parsley, boneless skinless chicken breasts, and diced fresh tomatoes and even some teeny tiny broccoli florets. I’ve added tender pea pods, shredded carrots, and green beans, and mandarin oranges (with the water, in place of broth) and pineapple.

I have made this for years but instead of chicken broth I use lemon juice. Yummy!!
Love this dish. Made some changes - of course. Used sliced chicken breasts instead of cutlets -worked in batches. Browned a can of mushrooms in with the last of the chicken. Used 2 cans of artichokes. 2 cans of low sodium chicken broth to give more ‘sauce’. Added 3/4 c dry Italian Marsala to broth and cooked down together. Makes a lot this way - we get two meals from it.

This has become one of my main dishes to make at home and for friends. I always add more capers than are called for. I love it. If I want a twist, I add kalamata olives and serve it over cous cous instead of pasta.

I used a couple of things differently mainly because our local markets dont have ingredients such as capers and i hate artichokes. So i used pitted stuffed olives for capers and NO artichokes or even brocolli. It was great and my Mr loved it although he isnt a big fan of pasta!

I made this recipe with a twist last night. My bf loved it! I didn’t have capers so I added chopped tomatoes with the artichokes, as well as some lemon juice, garlic powder, salt and basil. I also used whole wheat flour on the chicken and served over whole wheat angel hair pasta. It was a hit!

My boyfriend and I were not a fan of this one AT ALL. Very, very bland, and kind of gross. I generally am a big fan of Martha’s recipes, but this one I would not recommend.

I thought it was yummy! I pulled some chicken and pasta out for my younger kids before I added the capers. The kids had salad, chicken and pasta with butter and cheese and loved it! And my hubby and I had the meal above and salad and loved it too! I thought it was easy to make family friendly with my more picky young kids. Something I’m always looking for.

I found this recipe to be very bland. If I made it again I would definitely start of with some sauted garlic and throw in some halved cherry tomatoes. More of a summer dish to me. The white wine suggestion from a comment below is a good idea too.

I love this recipe! To add more flavor, before adding the brother I add some white wine to the pan first. And top with Parmesan cheese - yum! I’ve used marinaded artichokes as well and love their flavor contribution to the dish!

This was fantastic. It was quick (as in, can-prepare-it-after-work quick), tasty and beautiful - exactly as pictured. My husband took the leftover for lunch today after having it last night. The fact he was willing to have this two meals in a row equals a five-star meal. Kids gave it a thumbs up but lacked full appreciation for the artichokes

Very easy and quick. I will add either a squeeze of lemon/ 1/4 teaspoon red pepper flakes as it needed a little “spark”. I’m going to be making it again in the warmer months as it is light and tasty.
