Directions

Season chicken with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over high heat. Add half the chicken; cook, stirring constantly, until opaque throughout, 2 to 4 minutes. Transfer to a plate. Repeat with remaining chicken.

Add remaining tablespoon oil to pan, along with the onion and bell pepper. Cook, stirring constantly, until onion is tender and golden, about 4 minutes (reduce heat if browning too quickly).

Reduce heat to medium; add garlic, ginger, and red-pepper flakes; cook, stirring, until fragrant, 30 to 60 seconds.

Stir in soy sauce, vinegar, and cornstarch mixture; remove from heat. Add chicken and any accumulated juices; toss to coat. Serve in lettuce cups.

Would cut the chicken in to smaller pieces next time but will definitely fix this again. It was a hit.

Soy sauce, vinegar, peppers, onions, lettuce and garlic have 0 points, and 2 oz. of chicken breast shredded is only 2 points. One teaspoon of olive oil is 1 point. So just count the amount of chicken and oil you use and that's your total point count.

I've not made a chicken egg roll, but the pork and veggie recipes I've used always called for precooked filling. I think the deep frying more warms it through and crisps the wrapper than actually cooking the filling. Hope this helps!

I want to try this but I was thinking of using a won ton wrap and frying in wok/oil l would make a super stir fried/ Chicken eggroll. Only thiing is how long to cook to ensure chicken is cooked thru….especially since I’ve never made a egg roll in my life! Help
