  • 2 boneless, skinless chicken breast halves (6 to 8 ounces each), thinly sliced lengthwise into 12 strips 1 teaspoon toasted sesame oil 1 teaspoon soy sauce 1 garlic clove, minced 1/2 teaspoon red-pepper flakes Coarse salt and ground pepper 1/4 cup creamy peanut butter 2 tablespoons rice vinegar Vegetable oil, for pan

Directions

In a bowl, toss chicken with sesame oil, soy sauce, garlic, and 1/4 teaspoon of the red-pepper flakes. Season with salt and pepper. Thread each chicken strip lengthwise onto a skewer.

Make dipping sauce: In a small bowl, whisk together peanut butter, vinegar, remaining 1/4 teaspoon red-pepper flakes, and 2 to 3 tablespoons water.

Heat grill pan over high. Working in batches, brush pan with oil, and cook chicken until opaque throughout, 1 to 2 minutes per side. Serve chicken skewers with dipping sauce.

My family loves spice and strong flavors, so I always double the garlic, heavy on chili - as I did in this case. I used a stove top griddle to cook the chicken breasts on moderately high heat until golden. Teenage boys LOVED it, saying I was the best cook:-) The sauce was a bit too peanut buttery. I added a lot more chili, sriracha, vinegar, splash of soy sauce, s.oil and heated it on low. With 3x the chicken, 1/2 the sauce was enough, lightly drizzled.  
    
    Martha Stewart Member     Rating: Unrated       12/20/2010   AuntieBetty, I have baked chicken satay skewers, just be sure to soak the wooden skewers in water for a few hours or they could char/burn in the oven. I went about 25 minutes at 350 turning a few times.

I'm surprised how flavorful the sauce was with so few ingredients. The sauce is great, dip some cucumbers into it like I did- delicious.
