  • 2 tablespoons vegetable oil, such as safflower 1 small onion, finely chopped 1/2 yellow or orange bell pepper, chopped 1 celery stalk, finely chopped Coarse salt and ground pepper 1 pound ground dark-meat chicken 4 hamburger buns Lettuce, tomato, and mayonnaise, for serving

Directions

In a large skillet, heat 1 tablespoon oil over medium. Add onion, bell pepper, and celery; season with salt and pepper. Cook, stirring occasionally, until tender, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature (reserve skillet).

Add chicken to vegetable mixture in bowl; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix to combine. Shape mixture into four 4-inch-wide patties.

In reserved skillet, heat remaining tablespoon oil over medium; cook patties until browned and cooked through, 6 to 8 minutes per side. Place chicken burgers on buns, and top with lettuce, tomato, and mayonnaise.

I sauteed a whole (small) orange bell pepper, one small onion, and the celery, along with a large clove of minced garlic, then mixed with ground chicken (I don't know if it was just dark meat - it's what I found at the store - but it was NOT breast meat). Made 2 adult size burgers and 2 kiddie burgers. Served on fresh hamburger buns with garden lettuce and thick slices of heirloom tomato plus mayo, with succotash salad (Bobby Flay recipe) with feta. Might try garlic mayo.

I put 4 de-boned chicken thighs with skin on along with all the other ingredients and placed in a food processor and ground up. I added fresh recau/cilantro, fresh parsley, and a squeeze of fresh lime and mixed. I placed the patties on a greased cast iron frying pan and broiled in the oven. I ate atop a bed of delicious fresh greens with corn on the cob. This recipe is a keeper. It will be one that is passed down to my own kids.

Just a few modifications...I did not specifically buy "dark meat". I purchased regular ground chicken. I used a combo of red and yellow peppers just for color, added a couple dashes of liquid smoke, Worcestershire sauce, garlic powder, and poultry seasoning. Fabulous!
