Directions

In a medium bowl, whisk together mustard and white-wine vinegar; season with salt and pepper. Add sweet onion, cucumber, tomato, celery leaves, and sport pepper; toss to combine.

Grill hot dogs over medium-high heat until charred and heated through, 6 to 8 minutes. Serve hot dogs in grilled hot dog buns and top each with a pickle spear and relish.

Nathan's Hot Dogs wouldn't be used, instead we use Vienna All Beef Hot Dogs which are steamed or even boiled but never grilled. two strips of dill pickle, 2 wedges of tomato, diced onion, neon green pickle relish, celery salt, mustard only and 2 - 4 Sport Peppers on a poppy seed bun. The recipe for the buns are guarded. I know an ex-Chicagoan that opened a Chicago Style Hot Dog Stand in the South and actually brought a bakery packages of the famous Poppy seed buns so they could figure out how to clone it.

Never grilled, steamed, poppy seed bun, steamed, neon relish, two tomato slices, mustard, onion and of course, celery salt. Oh, a pickle slice and two sport peppers. NEVER KETCHUP! (It is considered bad manners and harmful to your taste buds to put ketchup on your hotdog within the city limits of Chicago!!)

This recipe is missing celery salt sprinkled on top of all the vegetables...also the bun should be poppy-seed if available. Sport peppers are optional. Mmmmmm....I think I know what's for dinner tonight!
