Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
  • 1/2 cup packed light-brown sugar
  • 1 large egg
  • 1 1/2 cups Everyday Baking Mix, spooned and leveled
  • 1 cup old-fashioned rolled oats (not quick-cooking)

Directions

Preheat oven to 350 degrees. Brush an 8-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on both sides. Butter paper, and set pan aside.

Using an electric mixer, beat butter and sugar until light and fluffy. Add egg, and beat until combined. With mixer on low, gradually add baking mix; mix just until combined. Mix in 3/4 cup oats. Pour batter into prepared pan.

Using an offset metal spatula or table knife, smooth batter evenly. Sprinkle with remaining oats, pressing gently to adhere. Bake until a toothpick inserted in center comes out with only a few moist crumbs attached, 30 to 35 minutes. Let cool in pan 30 minutes.

Using overhang, transfer blondie (still on paper) to a wire rack to cool completely. Place on a cutting board (peel off paper); using a serrated knife, cut into 16 squares.

                I've made this several times. Always really tasty but dry. This time I doubled the egg (actually added about an egg white and a half because I had some leftover from another recipe) it was moist and gooey, very good!

                Amazing recipe! I baked it in a pie pan because I didn't have any square ones. Yet, they were still amazing! My friends loved them all. Just one thing, they turned out to be quite dry, so we needed milk / juice to be served together!

                Good recipe. If you dont need 9 cups of Martha's baking mix, divide it by 6 to get the amount needed for the blondies: 1 c AP, 1/2 c sugar, 1 tsp baking powder, 1/2 tsp salt.

                First off- these are great! I'd like to try cutting back on the brown sugar as the baking mix is already pretty sweet. My kids LOVEd THEM!!! In step 2, it's not really batter but rather cookie dough. If you don't have an offset spatula try using parchment paper with your hands to press the "dough" into place.

                I found a conversion calculator on the web and just made enough of the baking mix to make one of these oatmeal recipes.  I also added in chocolate chips (about 1/3 c) and used a scant less oatmeal because it just seemed like too much.  They were awesome!  I bought butterschotch chips today and plan on making them again with those.  My family of five ate the whole thing that evening, they loved them!

                Oh, that's a shame. To be honest, I think biscuits (or cookies) and cakes with oats are better without flour as they're just more chewy and substantial. I dont' really think flour and oats mix well. That's my opinion, anyway...

                Well for all the comments I finally made these bars.  My family and I rated them just very bland.  Don't have to make these again, were the comments.  In all fairness to Martha, I will fess up and mention that I used Bisquick and not her everyday  baking mix.  But they did not measure up for us.  They tasted very blah.

                JulesUK a stick of butter weighs 4oz. or to you  Brits 113 gm.  You will have to do the conversion for the liquid.  My 7th grade math escapes me now. LOL.

                This looks great for my little boy, although he's allergic to dairy so I'd like to subsititute the butter for oil. I'm in the UK so can you tell me how much "1 stick" is, please?

                These turn out great!  Super Easy and Fast too!  I have made them several times allready and everyone really loves them.  Today I added a 4 oz. premium white chocolate baking bar to it.  I finely chopped half, and corsely chopped the other half.  Very good!

                Did you ever try this with the Splenda?  I ask because three cups of sugar is a lot for the baking mix.  If you did, did you use the Splenda that is just splenda cup for cup, or the mix that is part sugar and part splenda?  I have both :)

                I've made this several times. Always really tasty but dry. This time I doubled the egg (actually added about an egg white and a half because I had some leftover from another recipe) it was moist and gooey, very good!
