Ingredients

  • 1/2 cup dried chamomile flowers 2 tablespoons dried lemon verbena leaves 1/3 cup raw honey

Directions

In a large pot bring 6 cups of water to a boil over high heat. Remove pot from heat and stir in the chamomile and lemon verbena. Cover and steep for 10 minutes.

Meanwhile, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl. Strain tea, pressing on the herbs to extract all liquid. Stir in honey until it dissolves, and let the tea cool completely, about 1 hour. Fill four tall glasses with ice. Pour tea over ice and serve immediately.

Cook’s Notes You can also substitute lemon balm, lemon thyme, lemon basil, or lemon-scented geranium in place of lemon verbena for equally tasty variations to this light, soothing blend.
