  • 3 slices bacon, cut into 1/2-inch pieces 4 pints Brussels sprouts, ends trimmed and halved Kosher salt and freshly ground pepper 1 apple, cored and cut into 1/4-inch slices, each slice halved crosswise 2 teaspoons red-wine vinegar

Directions

Preheat oven to 425 degrees. Arrange bacon in a single layer on a large rimmed baking sheet. Bake until browned, 10 minutes. Add Brussels sprouts in a single layer; sprinkle with salt and pepper. Roast until they begin to brown, about 15 minutes.

Remove from oven, and toss in apple. Return to oven; roast until Brussels sprouts are browned and tender and apple has softened, 10 to 15 minutes.

Toss vegetables with vinegar, and serve immediately.

    Martha Stewart Member     Rating: 5 stars       11/29/2018   I follow the recipe exactly (rare for me). Delicious! A staple at Thanksgiving. When I make ahead (often), I reduce the cooking time a little so it's not mushy. Don't forget the vinegar.

I agree with the reviewer who said the cooking times were far too long, though. 10 minutes burned the first bits of bacon. I tried again with 4 minutes, which resulted in done bacon. The bacon continues to cook when you add the sprouts & apples, though, so it (the bacon) was too done when everything else was fully cooked. I think I will remove the bacon after it's done (leaving the grease) & add it back at the end next time.

The full time required for the bacon burned my first batch. I also thought there wasn't enough of it to contribute any kind of real flavor. Also the cooking time for the brussel sprouts dried them out. I'd try this recipe again but add more bacon and lessen the cooking times.

It impressed my guests because of the unusual apples and bacon additions to brussel sprouts. Brussel sprouts are sturdy so even the leftovers were good.
