Ingredients

  • 1 1/2 pounds frozen beef tortellini (from two 1-pound bags) 1/2 cup sun-dried tomatoes, thinly sliced Coarse salt and ground pepper 2 bunches arugula (12 ounces total), washed well and torn into large pieces 2 tablespoons butter

Directions

Cook pasta and tomatoes in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Drain pasta mixture, and return to pot.

Add arugula and butter to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats tortellini (you may not need all the water). Season with salt and pepper; toss to combine. Serve.

Martha Stewart Member Rating: 5.0 stars 07/07/2020 I thought this was very tasty, even though I'm not a fan of arugula. The flavor combinations work very well together. Glad we tried it!

Martha Stewart Member Rating: 5 stars 03/20/2018 Quick, delicious, easy weeknight meal. Great flavors! The pepper in the arugula is a perfect counter-point to the sweet/salty sun-dried tomatoes. Excellent balance and flavor in this simple and fast dinner.

Martha Stewart Member Rating: 5 stars 10/01/2015 This was very good, and super easy. The key to this, is timing and a gentle boil! I read some of the other reviews about the sun-dried tomatoes being over boiled and no longer flavorful, so I threw them in the last 5 minutes. I used fresh Italian sausage tortellini's, and boiled all gently until al dente, about 6-9 minutes. I used Ghee instead of butter, and topped it off with shaved Parmesan cheese. Hubby loved it, and he isn't even a fan of arugula! ... Definitely will make again, Yum!

Martha Stewart Member Rating: Unrated 12/20/2010 This was great... although instead of using regular sun dried tomatoes, i used the marinated kind...so I skipped the whole boiling them. But it was super easy and delicious! A definite repeat!

Martha Stewart Member Rating: Unrated 03/25/2010 I have to confess I'm a little befuddled by this recipe: boil the sun-dried tomatoes with the pasta? But I dutifully followed the recipe. The tomatoes were watery and almost tasteless after their violent "bath"; moreover, there was no notable corresponding increase in flavor to the pasta water that formed the basis for the sauce. Martha Stewart Member Rating: Unrated 03/25/2010 I enjoyed the combination of tortellini, arugula and (what was left of) the sun-dried tomato flavors; I just don't understand the purpose of diminishing the flavor of the tomatoes.
