- 2 onions, thinly sliced 1 cut-up chicken, (3 1/2 pounds in 8 pieces) 2 tablespoons vegetable oil 2 teaspoons coarse salt 1/2 teaspoon ground pepper 1 tablespoon paprika
Directions
Preheat oven to 450 degrees. Place sliced onions and chicken pieces in a 9-by-13-inch baking dish or roasting pan. Drizzle with vegetable oil; season with coarse salt and ground pepper. Toss to coat.
Arrange chicken, skin sides up, on top of onions; sprinkle with paprika.
Bake, tossing onions and basting chicken occasionally, until juices run clear when chicken is pierced with the tip of a sharp paring knife, 35 to 40 minutes. Serve hot.

Martha Stewart Member Rating: 5 stars 05/19/2019 It was simple to make and incredibly delicious. Prepare more onions, because you will want to eat them. Don't substitute the paprika. Sadly, it seems all the reviews we've taken the time to write on these recipes were all deleted while fancying up the site? Not cool at all! Martha Stewart Member Rating: Unrated 09/10/2010 Since paprika doesn't agree with me I used curry instead, and it was good! The onions are divine, it preps easy, and the cooking time isn't that long. I had cauliflower in the oven with the chicken--turned out great. Martha Stewart Member Rating: Unrated 10/18/2008 Update: Make sure not to use a GLASS PYREX dish for this one. Mine exploded in the oven last night while making this (for the second time this week. -- it's that good!) They are not meant to take that high of a heat, and it could have been extremely dangerous if it were on the stovetop and not inside the oven when it explded. I would have NEVER thought that this totally simple recipe would taste so great, but it is a real winner! It took less than 5 minutes to put into the baking dish, but it tasted awesome! I will make this one again and again. Next time, I'll add an extra onion, because they were that good. I served this with a butternut squash that I cut in half, scooped out the seeds and added a pat of butter, then baked along with the chicken. Really delicious.
