  • 8 bacon slices, cut in half crosswise
  • 16 small potatoes

Directions

Preheat oven to 400 degrees. Wrap each bacon piece around a potato and secure with a toothpick. Place in a baking dish and bake until bacon is crisp and potatoes are tender when pierced with a knife, 40 to 50 minutes.

                Everyone devoured these.  For someone who loves bacon and potatoes, I didn't think they were any big deal, but I was the only one.  Somewhat difficult to get the toothpick through the raw potato, even halved.  Maybe a quick boil next time to soften them up enough to put a toothpick through without
                breaking the potatoes.  I will serve them again though, since everyone else loved them.

                I found the "recipe" and my hubby made it for Christmas dinner appetizers.  I bought really good, thick cut deli bacon and gold mini potatoes.  He cut some of the potatoes in half so they could be bite-sized.  He was smart and roasted them on parchment.  One small bag of potatoes made 45 bites.  He roasted them for 60 minutes and got a wonderful  crisp outside and creamy smooth inside.  They FLEW off the tray!  So simple and so good!  We will try pepper bacon next! Yum!

                Delicious! Made this as a side dish to roast leg of lamb. Roasted them a few hours ahead and reheated them in the oven jus before serving.  4 stars.

                Super easy, darn tasty and very popular - made these as a Thanksgiving appetizer for about a dozen people and everyone loved them (kids too). Then told my mother in law about them and she made them for New Year's Eve with the same result... Great simple finger food for a get-together.
