- Cheddar Crust
- 1 1/2 pounds (about 3) Granny Smith apples, peeled, cored, and cut into 1/4-inch-thick wedges

- 1 cup sugar
- 1/2 cup all-purpose flour
- 2 teaspoons fresh lemon juice
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 2 tablespoons unsalted butter, cut into small pieces
- 1 large egg, beaten
Directions
Preheat oven to 450 degrees. Divide dough into two pieces. On a lightly floured work surface, roll out each to a 13-inch circle.
Fit one circle into a 10-inch pie plate; transfer plate to a baking sheet. Put other circle on another baking sheet. Refrigerate dough until cold, at least 30 minutes.
Stir together apples, sugar, flour, lemon juice, cinnamon, nutmeg, salt, and cloves. Spoon into bottom pie crust. Dot filling with butter. Cover with top crust. Fold edges over; crimp decoratively to seal. Cut a steam vent. Chill in freezer until firm, about 30 minutes.
Brush with egg. Bake pie 10 minutes. Reduce oven temperature to 350 degrees.bake until golden brown, about 45 minutes. Tent with foil; bake until juices are bubbling, about 45 minutes more. Let cool at least 1 1/2 hours before serving.

Scrumptious! Exactly the combination I've been seeking for several years! The savory crust and "just enough" sweetness in the filling is the right balance. I didn't mix the apples -- used the Macouns from our tree and they were perfect.

Martha, I TIVO your show every day. I love it. The recipe for the Cheddar Crust Apple Pie seems to be missing the Cheddar. LOL. Could you please let us know if there is in fact supposed to be Cheddar in the recipe? i wrote the whole recipe down and went over the pie part in the show about 3 times thinking i missed it, but i dont see the cheddar! :) thanks Liz Stoltz

I very highly recommend this pie, and don't be bashful with the cheese, it's the best part!
I also tented the pie with foil during the majority of the baking time for fear of overcooking the top.

It always takes a long time to make something for the first time. I remember the first time I made an apple pie in high school. It seemed like it took almost a whole Saturday. Now I can cut up the apples, measure everything and get it in the oven in about 45 mins - an hour. Then I do something else while it bakes. Once you know your oven too, you will know how long it will take your oven to bake something. :)

This is the very first pie I've ever made from scratch. It took me 8 hours! I didn't realize how much earlier I should have started to have been able to eat it last night. So we didn't get to eat it til this morning. Delicious! (even though we didn't have Cortlands, had to use Golden Delicious.)
