Ingredients

  • 1/3 cup sugar
  • 1 large egg white
  • 1 cup unsweetened shredded coconut
  • 1/4 cup whole almonds, chopped
  • 1/2 teaspoon pure vanilla extract
  • Pinch of coarse salt

Directions

Preheat oven to 350 degrees. Line a baking sheet with a nonstick baking mat or parchment. Whisk together sugar and egg white in a large bowl. Stir in the remaining ingredients.

Form dough into eight 2-tablespoon mounds, and drop each onto sheet, 2 inches apart. Bake macaroons until golden-brown on bottoms and edges, about 15 minutes. Let cool on sheets for 5 minutes. Transfer to wire racks, and let cool.

                I tried about 5 different coconut-almond macaroons (including Lucinda Scala Quinn's and Sarah Carey's!) and THIS recipe WON the taste contest!  This was crunchy on the outside and chewy on the inside.  It was the perfect amount of sweetness.  All of the other's were clawingly sweet...blaa!
                I will be making these for a tropical themed birthday party so I am adding food coloring to them.  Pink, yellow, green and aqua!  I will also be making some JUST coconut and using Martha's recipe for JUST ALMOND macaroons as well.
                DELISH and SUPER EASY!!!!!!

                I love this recipe.  I add a lot more coconut to it though. the first time I made them they were soggy. Quick and easy!

                This was a delicious macaroons and kosher for Pesach.  I made them for the holiday. I had to double the recipe because really 8 cookies? I would have had an uprising. I peeled and grated my own coconut, skipped the vanilla extract and added lemon juice instead because we are orthodox and even so these macaroons were great.

                pdiller-------for nutritional information-go to calorie dash board and enter all ingredients as asked and click analayze this will give u exactly all the nutrition value per portion, very helpful, as i too log everything i eat each day

                I added Chocolate chips and pecans to one batch and Raisins to another batch.  Also melted semi-sweet chocolate and dipped the plain coconut ones into it...They are FABULOUS.  Better than spending $15 on store bought ones and Better Tasting.  Thank you!!!!!!

                I made these for our first passover at our friends house, and they turned out delicious!  I was a little concerned because they had so few ingredients, but am so pleased with the end result...and they're easy!
